This probably just means that we will have to pull the abilities out on our hotbar again since alot of the cross class skills are being given to all the crafters through their own abilities

You're looking at Yohi P, who has equipped a crafting class.
We presume that he set his hotbars up prior to 5.1.
His hotbars are full of grayed-out abilities, which means between the time he made his hotbars (pre-5.1) to the time that screenshot was taken (post-5.1), those abilities were all removed.
While I haven't seen the Livestream and don't know the details, if any were mentioned, remember that each crafting class has its own "version" of each skill. Standard Touch on ALC, for instance, has its own icon, which makes it distinct from WVR Standard Touch or CRP Standard Touch, but they all do the same thing.
SE could simply be unifying each ability, so there's only one icon across all classes. A bit like when GLD provoke was replaced with Role Action Provoke. GLD provoke was greyed out, and had to be replaced by Role Action Provoke, but both did exactly the same thing.
This is just me going by the OP's image, with no context whatsoever. If the Livestream provided more details than this, I'm currently unaware.
Yeah, basically things like Steady Hand II and Byregot's Blessing were 'greyed-out' upon making them available to all crafters, but we still had them. Just had to change out the 'old' versions for the 'new' ones (that did the exact same thing).
Still, that is a lot of potential changes. But not necessarily all of them being completely removed.
Looking close I see stuff like hasty touch, a byregot, masters mend 2 and so on greyed out.

Good riddance leveling every crafter, I hope.
I've been casually leveling my crafter and gatherer only through beast tribes, leves and custom deliveries. With only CRP at 79 the rest 50 and below, I certainly do not craft as intensively like most of you in this thread.
Having said that, I welcome this change. It's easier for me to properly learn the way of crafting with a new system. As of now, I only manual craft and most of the skills I don't even use. Those button bloat need to go. They confused the heck out of me.
That means absolutely nothing, when 5.0 came out my skills was grey as well, skills like Steady Hand II, Byregot's Blessing and more, the same skills at picture.
A lot of skills could be consolidated and upgraded through traits. Some skills are only on my hotbar because of the game putting them there automatically through leveling and some skills aren't there at all at this point. 5.05 macros have, what, 12-15 unique skills and every thing lower than that can be crafted/hq'd with a variation of those.
The reddit translation explained they felt crafting had far too many buttons that no longer served a purpose. So they're merging or removing them.

The fact these adjustments are happening at the same time Ishgard Restoration is pretty much them trying to make it easy as possible for people to contribute.

Good. Crafting could use some streamlining.
In any given craft I probably used 10 abilities. But I had 40. So yeah... some streamlining isn't totally out of the question. Also I'd caution against making assumptions based on a screenshot of hotbars. We don't know what that means. Let's not pretend that we do.
What happened when we logged in for 5.0?
Our Byregot's Blessing was greyed out.
Our Steady Hand II was greyed out.
Our Name/Brand of [Earth/Fire/Ice/Lightning/Water/Wind] was greyed out.
But we still have those things, with the Name/Brands being consolidated into "of the Elements".
All that's being demonstrated in that screenshot is how much button bloat is getting removed. It's not showing us what our toolbars will look like once we've changed them to the new set of actions.
Looking at what is not greyed out give a few hints on things.
Inner Quiet, Great Strides, Basic Synthesis, Basic Touch, Standard Touch, Careful Synthesis, Observe, Master's Mend, and Precise Touch are not greyed out. Careful Synthesis has a CP cost like Careful Synthesis 3.
Looks like Basic/Standard/Advanced Synthesis have been merged into one action and Careful Synthesis I, II and III have been merged into one low CP action.
Good. There is so much bloat in crafting skills that they don't even fit in 3 full hotbars.
lol its not gone there were so many ability's that were basically the same after a bit its time to consolidate them and streamline crafting
As someone who recently started crafting and just got all my crafters to 25 and CUL to 60, I welcome any streamlining of the process. My goal is to get all to 80, but may wait until after the update.
I made macros at lower levels, but I soon came to realize that they failed far too frequently. For one, they completely fail whenever a latency spike hits. Also, once I hit level 30 or so, there was no all-purpose macro that was going to optimally craft everything for me. Maybe I just need to expand my macro-ing skills, but crafting went from being one straight-forward sequence of optimal events to an optimal flow-chart instead. Crafting is one of my favorite parts of this game, even though the rewards are lackluster so far. I'm looking forward to finding out how relevant it is in the end-game, and I'm curious to see what the next patch does to it. I'm really taking my time leveling because now that I have two classes at 50+, I'm trying to raise everything else (including crafting) before moving on.
I welcome the change. A lot of people were just resorting to macros and calculation websites to automate the process anyway so less bloat is a good thing. I do hope that it'll still be possible to make a profit but I'm not too worried since it's fairly easy to identify a market to break into on any given day. Some of the most profitable items are low level recipes too, especially when new player housing is added to the game...
Interested to see how prudent touch and delicate synthesis got nerfed, those two moves absolutely ruined endgame crafting. Because they did mention it was too easy to HQ recipes in the digest. I’m actually excited. :)
I may actually try out crafting once they get rid of the omni-crafting nonsense. nice
At the end of the day, removing cross class skills might make it slightly easier to level a single craft job to 80, but presumably the recipes will still interlock and be distributed over multiple jobs, making omnicrafting the way to go? I don’t see all of the recipes being available to all jobs, though I guess they could do that.
