You basically just described races that fit each class based on who've you seen in either MSQ or job trainers.
All races fit all jobs IMO. It really just depends on the glamour one chooses.

Roes are the best race in the game.
I don't really get why so many people think WHM = Lala or generally healer = Lala. Because they're cute and tiny?
Imo WHM fits Midlander much better as Gridania is presently the centre of both conjury and white magic and afaik every Padjal is a Hyur. Only very few Lalafel are found in Gridania and ARR trailer Lala aside, you don't really find much ingame that points towards Lalafel when it comes to white magic.
SCH fits Lala really well as they are known for their intellect and strategic thinking (think of all the successful Lala merchants). But WHM? Not so much.
I think you just have to look at the official artwork (not the CG propaganda artwork either) for each class and Job to see what race SE themselves regards as the literal 'poster race' for that Job or class (and some choices are rather surprising).

Warrior is a perfect fit for lalafells just because it's funny to look at the small potato carrying a large axe. Hahahaha!
It's been said before, but any race can work great with any job, it's just a matter of making the right glamour.
That said, I am particularly fond of female Au Ra for Bard and Dragoon, Viera for Dark Knight, and female Midlander or Viera for White Mage.

In XI lalafells, or tarus, had a much bigger MP pool then any other races an were often healers or blms or rdm, or smn especially.
It was so huge a difference in fact that some races trying to be whm pre level cap were not invited to parties. A galka whm would very often be passed over.
Im playing only Xaela and now Viera.
Jobs that fit my Xaela are Nin,DRK and DNC.
My Viera with max height fit War and DRG.
Comming from FFXI a lot of SMN and WHM i meet was Tarutaru=Lalafell

I agree partially. IMHO, White Mage - as in the job armor preview on character creation - can also look quite good on female Au'Ra, but maybe it depends on the Au'ra. This character creation preview was the main indicator which jobs, except of WAR, Altani would take. With a few in reserve if I ever decide to make a rabbit girl alt (DNC is kinda cliché seeing that the trailers promoted it, to be honest XD).
I'm thinking a Viera Veena for everything. :)

DRG - Elezen, there really isn't much option here IMO, the overwhelming presence of everything Ishgard and Estinien make the job synonymous with the race.
SAM - Hyur, again best fit the aesthetic and the centrality of Hien, Musosai, Makoto, the Sekiseigumi etc all help too.
WAR - Roegadyn is the obvious choice on most levels

The reason for that is also a part of my personal lore - and lots of time I was pondering about fantasy/video game logic: Physical weapons on Lalafell are small, and probably not hurting any of those huge monsters and entities we fight. What are my arrows like for Titan? Toothpicks?
Magic, however, is unlimited [or at least hard to grasp for us real life people]. Magic has nothing to do with size, but with the power of the mind and the sheer endless capabilities of the casteruntil he gets Alzheimer.
The weapons of a Red Mage is the crystal and the sword. It is Yin and Yang.
The crystal needs (?, citization needed; I assume it is easier to handle than simply holding it or refusing to collect mana/aether without the proper sword counterpart) the blade but the blade surely needs the crystal to get empowered.
So my Lalafell might wield a physically small sword - but it's empowered with an unknown multiplier, a variable = The Red Magic. And since small creatures (e.g. Tarutarus) are known for their magical abilities, those enchanted swords do hurt a lot - despite their diminutive sizes. A certain safety distance can help to survive and thus being a caster can be preferred!
Agility is also important for our melee combat, and being cumbersone is a liability. Swiftness trumps body mass!
So the magical part is simple to understand, but magic-infused sword blows finally nullify any concerns about the size of my sword. It might be a butter knife to those gigantic foes, but those magically empowered hits hurt.
My second profession is the Scholar. We Lalafell are prey to many living beings, and - especially my race, the Plainsfolk - have good hearing. So when we can't leave our underground homes because our predators are stalking the surface, we read. A lot. And while we spend our times with our fairies and books, we improve. Roegadyns or Au'Ra would probably be fighting those predators, axe-wielding and with battle cries going on.
We Lalafell however need to be clever in order to get from A to B when death is around every corner, we create widely-panned plots (The whole Ul'Dah story arch up to 2.5 should be evidence enough, one Lalafell created a plot that has been used for another Lalafell to profit from), we often manage to stand out despite reaching only to the crotch of most tall folks.
A few (personal views) on professions Lalafell are not fitting:
So, warriors should be beefy. I remember during my time from 2013-2015, there was a guy with a signature that said: "Hitpoint density of Lalafell tanks attract smaller planets". While this sounds funny, it shows my personal problems. Imagine a Plainsfolk (that, at least in the story so far) yelling and getting the attention of an enemy: A comparably week and very rough voice that is barely heard. Now let a tall Hrotghar or Roegadyn do it. Or at least tall folks that are visually obvious.
White Mages, well, neither Plainsfolk nor Dunesfolk have anything to do with the magic of the nature surrounding Gridania. Especially Dunesfolk, coming from hot, barren lands, and obviuosly having the Thaumature's guild ran by Lalafell, are probably the farthest awayof any White Magic. They can study it nonetheless, but it looks like The Marlboro Man making advertisements for nicotime gum.. (May he rest in peace)
Neutral are: Ninja and Dancer. As an Asura Deadeye/Thief in GW2, the small size (and high intelligence) of my guy made him a dangerous assassin, but then again, the size part comes in place, while in GW2 I had firearms... Dancer? Well, they can step on your foot and you don't yelp in pain due to their low weight. AST is, to me, I don't know. (Oh, I will get slapped now:) Hocus Pocus. If you can heal me with your deck of 52 (while counting Flowers on the Wall), fine, but I don't think we [Lalafell] should waste our magical potential that is fore sure :)

Some jobs actually have confirmed races in their lore. SCH and BLM are both Lalafell jobs, Warriors are a Roegadyn job, Gunbreaker a Hrothgar job, WHM is a Hyur job (think Padjals), DRG is an Elezen job, MNK a Hyur (Highlander) job. Now this isn't to say the other races can't be those jobs, nor that they practice them. It's just what has been established in the jobs lore on who created the jobs and the most common practitioners.
