The class doesn't really matter too much for the MSQ, there aren't that many fights in it. But for those few fights that do exist, all I can say is I wouldn't recommend showing them off as a healer as most of them expect you to do most of the damage.
Any tank job would put you right in front of the action. It'd also get you faster queues when you have to go through an instance, so less downtime for your viewers.
It's pretty much impossible to say right now since multiple jobs, DRK included, are supposed to get extensive overhauls. We won't know what those look like until the Live Letter happens in a couple weeks.
I'll have a definite answer after the live letter this month showing all the changes but dancer seems pretty flashy for streaming plus its a brand new job!
Thank you for the suggestions I will be sharing the stream url here after the live letter than and get to choose between yours suggestions.
Tank is a good choice for that sweet fast queue and center action but I was thinking SCH might be okay since you get a bit of pet back up, might get distracted sometimes while streaming and the pet could keep it from being a total fumble lol (and is healer so still decent queue times).

This is the especially good option if you're a less good healer, because chat loves nothing more than to laugh at a streamer; pull a ZERO DEATHS meme and you'll do fine.
I also agree that a Tank is the way to go for the typically faster queues. The only content that will have longer queues for a Tank are 24-player alliance raids.
If you will be leveling a Tank through the content and aren't familiar with playing Tanks, then I strongly recommend PLD or WAR. PLD will be generally "safer" as it has more mitigation tools. WAR would probably be more exciting though...
Although DRK is my favorite tank to play atm... leveling as a DRK is still painful and IMO it doesn't feel like a complete job until level 70.
Wait until the May live letter. But I would assume DRK or GUN would be the best, or a healer job.
Pick a dps only if you have healer/tank friends to get you through the queues.
