Does anyone enjoy doing the Eureka content? I feel like everyone I met said it's boring/annoying/lame/... Shouldn't it be fun playing a game? Why doing part 2 when no one wants to play it? Why planning part 3 of Eureka?

There are some that do and some that don't.
Anemos seemed to be more or less even in likability but the later updates gained more disapproval.
Anemos is ok, no worse than the monotonous loot tunnel scramble the the roulette system is. Pagos should be used as an example of what not to do ever again.

Let me say right away that I dont enjoy Eureka - however neither I nor the apparently huge amount of people who dislike the content speak for everyone, so I'd have to answers to your questions:
First of all there are people who like Eureka. Just because I dont like a piece of content, it doesnt mean no one does or that the content shouldnt exist - a lot of content is actually not enjoyed by the majority of people (crafting, raiding, PvP... yet all of them get updates). While playing a game should indeed be "fun", that can mean something different to every person - I dont find Eureka fun and I explained why in great length, so I wont repeat it here, but at the same time I can respect that someone else might find it fun - I know a few people who kinda like playing it excatly for the reason that its somewhat of a mindless grind they can do when they come home and are tired from work. Not my cup of tea, but it doesnt have to be. Doesnt has to be yours either.
Second - and probably more important: The devs most likely dont plan from patch to patch, but made their Eureka-concept during the development of Stormblood all the way through all 6 elements - at least to a certain amount of detail. They cant just pull the plug on it, just because Eureka wasnt well recived because that would mean throwing away all the work they did and replace it with... nothing. Some might argue that that would be better, but we all know that it wouldnt.
That they were planning and developing ahead is most likely also the reason why we saw so little of the feedback that was given in regards to Anemos inpact Pagos: They were to far ahead developing it to make use of that feedback - one can only hope that they're gonna make adjustments for the following ones now... even though I wont hold my breath on that.
...and maybe they're hoping that people will start to like it eventually...
By now I honestly believe that their biggest mistake in regards to Eureka was putting the relic in there - because now a lot of people who arent intrested in the content feel forced to do it (and they are, if they want the relic). If Eureka would have been truely as optional as crafting, gathering and UWU are, there would have been a lot less of an outcry.
Currently, people who just dont enjoy the content are doing it and are (rightfully) upset about the whole situation.
I got two weapons and did not enjoy it at all. The first weapon I worked for, of course part of that was the absolutely dreadful leveling experience, but the later half I farmed dragons, Bunnies, ran NM pts yada yada yada. After I got about 10 crystals into my second I started camping Icepoint while I played other games and wondering why I even keep subbing to xiv, moving my mouse every 5 mins so I wasn't kicked and only going for NMs. There was no way I was going to go back and forth between 2 dragons for hours again and spend hours trying to spawn a NM that never even showed up in my 180 minutes.
I will admit I took my alt in after the light reboot. But as he was lvl 23 all I could do with him was camp icepoint and solo challenge logs. For all the ppl in there complaining about ppl camping icepoint and pulling NMs fast so the campers under 30/32 cant get there in time, none of them actually want you in their pt, want to help get you around on a 2 seater or want to help others at all.
Its just so poorly designed I have a hard time understanding why anyone would have fun in there. I literally cannot wrap my head around it. And after hearing what we have in store for Pyros and beyond with that weird Logos system, I likely will not continue cause that just sounds 20 shades of awful.
I made 6 relics in ARR, 5 in HW and will be making 0 in SB
I like and I am enjoying Eureka.
I enjoy Eureka. I've met some fun people in both Anemos and Pagos. I think I've had more fun in Anemos though, when everyone would help spawn NMs. Sometimes I wonder if that part of the content is intended or not. Let's face it, grinding single mobs for the "kill chain" is not fun in the slightest. I don't like that the chain caps at 30, and I also think it's bonkers you aren't guaranteed loot for keeping the chain going. Each x10 tier of the chain increases your chance at whatever, but doesn't make it worth all the time wasted keeping it going.
I believe Pagos changed things for the worse. First of all, I have yet to see any of the crystals drop from regular mobs / chain kills. Instead, we get light and we certainly don't get enough of it. Even after the recent buff to light gain - you still earn way more crystals from NMs than you do light. By the time I finished getting enough light for my first weapon, I had enough crystals for a second weapon. For those who didn't do the content, you need light for weapon stage 1, crystals + light stage 2, NM item + light for stage 3. You'd have to join a "light farming" party and vehemently ignore NM spawns to cover the gap between crystal gain and light gain. Obviously, you wouldn't want to do that because the NM also grants a boost to light.
I like the NM train in Anemos because you could chat with other players and far fewer people were salty. A friend of mine enjoys grinding mobs in Pagos for challenge log because it's soothing and they have anxiety (as in it affects their breathing).
Do I enjoy the story of Eureka? yes. Do I want the glamour / stats of the gear? yes. Do I enjoy the actual mechanics and environment of Eureka? Absolutely and unequivocally NOT!
Yes people like it, others hate it. That's just how it goes. I typically avoid all the topics bashing it though. Honestly, prefer this relic over the prior relic content by far.
I like Pagos.

I didn't enjoy Pagos.
I've had some parties this week that were kind of fun because the players were trying hard and talking and there have been nerfs so we could really feel the effort paying off. When progress moves fast enough for you to not feel trapped in a terrible grind, then it's ok. Frequent rewards from mutated enemies and notorious monsters without much downtime feels quite good. I don't know why some of the extra rewards like emote are so rare they almost don't exist. I guess that's ok though since none of those things are mandatory to have. Anyways, I think eureka is ok if they make events like NMs frequent enough to break monotony, don't make the grind too slow, don't make the environment bland and featureless.
I'm hesitant to weigh in because it's new to me but my first impression is that, yeah, I enjoy it.
I want to like it but there are a lot of flaws that are difficult to overlook.
It's like the worst parts of MMORPGs from the early-mid 2000s rolled into one disgusting package.
I personally don't enjoy it for a variety of reasons, but I no longer even find value in listing them.
One thing worth noting, though, is that the enjoyment of Eureka zones upon release is not equivalent to enjoyment later. Group interactions are the key appeal to Eureka's content, and dead maps makes for dead gameplay. The absurd lack of an elemental level sync system - something that should have been a fundamental requirement from a design standpoint - compounds the issue, because you're essentially walled off from playing with any of your friends who are significantly higher or lower level. So there's that.
As an example of this, my boyfriend didn't like Eureka when it was originally released, but decided to give it a bit more of a shot when the Challenge Log entries were added. Unfortunately, he found that grouping up was quite difficult, and routinely encountered instances in which his party (built around completing the Challenge Logs) had to shed members as people leveled up at different times. It worked out to a much more unpleasant experience than he'd have had if Challenge Log entries had been there from the start, when there was a more even assortment of levels.
I enjoyed Anemos. there was a real sense of community. You could joke, have fun, and kill stuff.
I despise Pagos. Light requires multiple 30 chains so you can't take a break leading to extreme monotony. It's just not fun IMHO.
There is no way I would be in Eureka unless the Relic wasn't tied to it. So I don't really "enjoy" it as much as tolerate it to get my weapons and armors.
The 1st zone I really liked.
The 2nd zone I never got into and more or less hated every part of it. So much so I don't think I got to 21.

That said, people enjoy Eureka and there's nothing wrong with that. I was never around for its heyday, but when I farmed Diadem for the minions and mount, I found it to be nice even though everyone swore to me it was so bad that it'd shorten my lifespan by five years.
Anemos was okay, even if a bit boring. It's just "S rank style" hunt mobs over and over and over. Other than a few well known FFXI trophy items as random drops, nothing about it felt like FFXI so I don't get why comparisons toward it were ever made. (Putting in EXP loss doesn't take us back to FFXI, it just takes us back to the 1990s. Even then, FFXI was *never* that punishing with its EXP loss, even in the earliest eras of the game.) I don't find the Hunt interesting, so I don't find this interesting either.
I don't know what it is about Pagos, but the mentality is entirely different. In Anemos when you died with people nearby, you would almost always get a raise, without even having to ask. In Pagos, numerous times have I had crowds of people just zoom by my corpse without a care; I would literally have to beg in shouts for a raise to get one. I don't really plan to do anything else in this zone until I'm back at max level; the low-level experience in Eureka is the worst (it was like this in Anemos too)
Yes we call them crazy ppl. All jokes aside Pagos is the worst until Pyros comes out.
No way I enjoy it. All got from it was very bad headaches.
There's enough level 35s floating around in Pagos that it's not quite going to be DoA (you know, unless they make it really bad)
Definitely going to be a sharp decrease compared to Anemos release, though.
I dislike how they put the relic in it to make people do it, because if they didn't, it would die faster than Diadem did.
I put a lot of time into this game and I still can't justify stepping into Pagos, Anemos was a dull fate grind, but at least there was some jovial conversation and sense of community, in Pagos, there is none of that, no one wants to talk or have fun, hell I've seen people run past corpses asking for a raise, even on the worst days of Anemos I never saw that happen.

Pre level 30 Pagos is simply awful. No aetheryte access to the top half of the map and no mount. Pagos would be so much better IMO if these restrictions weren't in place. Because by the time I got my first wep I was way too burnt out.
I enjoy Eureka, it's not boring faceroll world. There's stuff to do, the environments are interesting, and they introduce new mechanics. I really like the violent weather effects, very pretty place to wander.
I got the i350 first two weeks of Anemos. My i370 the first two weeks of Pagos. If there's no mount in the next two, i'm not running it till its nerfed to the ground between expansions. It wasn't fun the least bit.

This attitude is pretty much exactly what had us doing hundreds of FATEs for Yo-kais and other such things
Clearly, if they're doing the content, it means they love the content, right? Couldn't possibly be because there isn't any other way of getting the stuff that's locked behind it, even if it's despised, right?
I like it, i also liked diadem.
im not gonna say pagos is perfect because its extremely far from it, as a base i think this has potential to be fun for all.
also the emergency mission in diadem was great gonna be interesting to see eureka version of it.
Eureka isn't meant to be enjoyed. It's meant to be survived.

I liked doing roulettes hunts and mount farms to farm tomestones/light for a relic weapon piecemeal. I probably wouldn't be jumping to call it brilliant, but it was a nice timefiller to do between raids.
I couldn't stand either method of doing eureka whether it was the uneventful #30 chains or the fate trains of watching people afk off you and dead shout memes. Too many long pauses of nothing going on.
I'm disappointed in myself for investing the time to 35, although i did skip pagos weapons.
no, i don't enjoy eureka as a whole, pagos simply has a terrible leveling and a terrible grind
on pagos leveling before nerfs, chaining mobs was outright boring(mindless mobs vs requiring to do your rotation as best as posible to max rewards), after the nerfs, leveling is terrible because you take way to much to reach the upper area while you are bellow lvl 31 plus you are likely to die a few times on the way(as how this game is currently right now, it doesn't blend well to stealth unless they add somethign what allow us to become invisible outside of ninja) and people tends to not raise you making it harder and frustrating
the light grind before the nerfs was outright boring for the very same reasons as leveling on chaining, after nerfs is outright boring because again same reasons of chaining if you go that way, or outright boring because you either afk or kill mindless mobs to spawn a NM what could take 30 minutes to spawn
any grind to not be complained to, it needs to be fun, arr and hw ones where somewhat fun if you didn't grinded them hard(example, farm 20 times or more per day the aetherochemical research facility), eureka feels like they made this way because a majority of people did whent that way(spam the same dungeon a lot) and so the devs might have believed what people did enjoy repeat the same task over and over and over
