So I want to transfer server but how do you transfer with more gil than the server transfer allows?

If you have overflow Gil you can buy allagan currency off MB then trade to npc, or a popular minion and resell on new server. If you have an alt you are also moving maybe put something on the MB and buy then do the opposite once you move. -

Alternatively you can also find someone to trade your gil to an alt and transfer both characters. All characters on a world can be transferred for one fee. -

I would also suggest scouting out the destination server for prices on common and hot items, such as glamour or crafting materials for said glamour (for example, Thavnairian Wool from treasure maps), furniture, and other big ticket items. Then compare those prices to that of your server, as well as pay attention to last sold dates (so you don't buy items that move very slowly and potentially take a huge loss). If they are acceptable to you, buy those items from the market board on your current server so that you can resell them on the destination server. Depending on the market, you can either come out with minimal loss, break even, or in some cases even turn a profit. But you'll be able to surpass the gil limit that way. As Cat Girl said, 10 mil for you and 5 mil for each retainer you have. Since you get 2 retainers free, that's a minimum of 20 million you can bring over with you. Obviously more with extra retainers.
You do keep your retainers and their inventory. You may have to rename your retainers when you get to your new world (if another retainer exists with the same name already), but other than that everything with them stays the same.
My first transfer from Hyperion to Coeurl I actually made a huge profit. Moving from Coeurl to Sargatanas I had a slight loss but I made the gil back already so it's not a big deal.
