Probably weaver. Apart from drg and tanks, all other jobs wear about 3-4 weaver made pieces on themselves so that's job security right there.
Now to actually be good at it is another question...

Honestly - I'm more akin as a gatherer than a crafter..but I can see myself teaching goldsmith-ing or alchemy.
I'd like to think that mine would set up a business supply chain beyond retainers so she didn't have to make/gather EVERYTHING herself.
Culinarian, I think. Even though my character—her original persona—could barely boil water. But I enjoy CUL, so she enjoys it, too. :p

Mines would be ALC, its interesting what concoctionsi could make, i would also be a chemist and use those In battle.

Armor crafting and moving on to learn how to make firearms/cannons as the story progresses. Arms dealing is always profitable. :p
Blacksmith, I like a lot of the characters involved with the blacksmith stories and I have always liked blacksmiths. Also if I was lucky, I could study under the wing of Gerolt and become a drunken master blacksmith like him! :D

Weapon smith. Let's be honest. We, as warriors of light, see a rather rose tinted sugar coated version of Eorzea full of splendor and wonder. For others, it is NOT a nice place to live. We've got primal demons and Gods coming out of the woodworks who can mind control your best friend and have him kill you, marauding beast tribes, bandits every time you turn around, Garleans crashing airships into your home town and having a "who can be the most cartoonishly evil" competition in the back yard, the Ishgardian inquisition burning people at the stake for no good reason, dragons who might still hold a grudge after a war that has persisted for 1000 years, accidental explosions from alchemy experiments, pirates, brigands, thieves, rogue black mages who would explode your lungs for fun, the list goes on...
And with all that, wouldn't you like a sword with that special "Angel of Dawn" guarantee?
I'm currently on a mission to craft and obtain stuffed ermmm toys(?) so my character would probably make them and hand them out. There is a coffer full of valuables next to her bed so profit isn't a factor.
I think she'd also help trade in Gyr Abania and reconstruction in Yanxia by passing on her knowledge of gathering HQ materials and crafting HQ tools x) Giving tools away in that case would only hurt the economy ( I'm sure Alphinaud would tell her )
Carpenter or Armor building Houses or airship by using my ability of a DRG while ERPing to make kids.

My character would like to be involved in all the steps of the process, from seeing the ore mined and the hides skinned, all the way up to becoming a fine weapon or piece of armor. If they were doing this as like a modern career where they likely don't have the time to do every last step however, they'd probably be in management.
If Sora had to give up adventuring and take up an actual job (like dad always told her to do anyway--screw you dad) it'd probably be Blacksmithing, a skill she picked up because she liked making her own gear for combat.
Investment Banker and speculator. I would play the market.
Well... if Dhem finally gave up the mercenary life for good she'd be doing what she does in her spare time so she'd be a Blacksmith. She picked it up as a hobby when she moved to La Noscea and I suppose as a fallback in case she can't find work beating the tar out of people :p

Probably a Weaver seeing how people always are in need of clothing/repairs/tailoring. More than likely specializing in women's fashions.
Probably blacksmith since there's nothing I love more than weapon glams (well maybe regular glam) :p but yeah too many weavers/leatherworkers. Also blacksmith works perfectly for roegadyns since hellsguards are known to create some of the best weapons in the lore.
Would? I AM a blacksmith and provider of the best weapons this side of the Ruby Sea. How do I know? I've killed MILLIONS with my own weapons. It's one thing to admire "craftsmanship" and "balance".. it's quite another when you're buying something that I know personally slides in and out of enemy armor with ease. I CAN PERSONALLY VOUCH FOR HOW I LANCED AN ANCIENT DRAGONS EYE OUT WITH THIS SPEAR!

As a crafter I would be a gold smith and a weaver. I could make all the pretty and/or protect able things to wear and gems should sell quite well too. I also like both guild masters so this would be a good thing too. (And the weaver set often looks so fabulous)
As a gatherer I would probably do all three classes because two of them are kinda necessary for the items that I need to craft (which means that my cost of production would go down thus I could offer cheaper goods to those NPCs that dont have much Gil) and the fisher is there to just get a bit of a rest from all the crafting and gathering stress. All three are also kinda interesting since they will bring their own sort of adventure. Its also just nice to picture my character and their chocobo just traveling the country for more items to collect and sell.
If I could pick any profession it would be a waitress in any of the major cities except Ishgard. I could hear the stories and gossip of adventurers then accept 'tips" to relate these tales to other adventurers. Besides becoming quite wealthy I would also be safe in town, where I would stay. I would never level my starting class because no matter how powerful I am or how weak the monsters are, the idea of being constantly bitten, scratched, mauled, burned, froze, poisoned, and slapped is not appealing at all! Even a level one ladybug attack has to hurt worse than stepping on a lego.
If I needed steady work I could always be a Lavender Beds gardener or lamplighter. The sheer amount of hedges and flower beds would mean job security. if I have to pick one fo the official professions I would be a carpenter.
Technically, Machinsts ARE crafters (in the sense of the Magitek-derived technologies of Skysteel). They're the "tinkerer" job, and much like there's a combat variant of the Astrologian, Machinists are basically gun-toting engineers.
out of Crafter & Gather classes: Miner, thou not easy (or safe) it just seams to call to me in this game... I'd still bring my MCH gun for >.> reasons, maybe even find a way to work the pickaxe into the gun to just "Ruby" my way threw all that dirt
If I had to pick a crafter thou... Blacksmith, ie weapon shopkeeper (got a taste of this in RL at an old job while cleaning the cheap swords at a pawn-shop... was so damn fun)... still keeping my gun thou
