One of the few things I have never done are the hildibrand quests. I looked and it seems like a long chain of quests. Is it worth reading and watching cutscenes or would I be better off skipping everything?

depends on your tastes, it's just a bit of fun really. Some comedy relief :)
No point doing them at all if you're gonna skip cutscenes lol. It's kind of the whole point since it's just a comedic, on-going story. Just boils down to if you have the time for them or not since it's entirely optional content.
There are some "primal"-trials in there. Anyway, if you're doing them I would recommend to watch the scenes the first few missions. If you don't like the comedy aspect of them feel free to skip :)
FWIW, even if you're not into the comedy aspect of those quests, it does lead to a serious in tone spin-off mystery quest line in Foundation about half way through, so it might be worth doing just for that. I found that quest line to be really well done, and made you think about a few things.

Long answer: Yeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeees.
The trials are kinda fun if done synced(unsync makes them a joke), there are a couple cute minis you get along the way, theres a great orchestrion roll, you meet some interesting people, and personally i thought the comedy was well done.
For ARR quests, you unlock a number of trials which in turn drop at least one unique minion. You also get a number of glamour pieces.
So yes if you really care about that.
For HW quests, I was told it was just cutscene and no extra trial. So I personally put that on hold.
trials, minions, glamour, and a couple emotes, including a dance.
But really, it's about the comedy, so you'd be missing the whole point if you do the quests without watching the scenes.
Hildibrand's humor may not hit everyone but the minions, items, and fights are worth while. Try out a few cut scenes and if it isn't your taste then skip the cut scenes. But it's a really nice side story. Hildibrand dates back to the version 1.0 days btw.
Do you enjoy Japanese comedy? Yes? Yes. No? Eeeeehh. 2.0 unlocks a few trials. 3.0 calms the comedy down for story and tie in with the in game plot with a character deeply involved. No trials, but I loved it. I'm sad there wont be any coming in with 4.0.
ARR Hildy was good and I would suggest definitely doing these quests.
HW was meh so do em if your bored.
Neither comes close to 1.x Hildy. Sad you guys cannot play those questlines anymore :(
The final quests are great. They get sentimental. The Costa del Sol quests are the best of the bunch.
Hildy and Briardien need to team up again, the chemistry between them was awesome.
I enjoyed the side quests, even if they don't have their own trials I'd settle for duties honestly.
The ARR quests are pretty good fun. It got stale in Heavensward, and I basically forced myself through the last couple of tiers just for the sake of completion.
From what I've heard, they are planning to conclude the series in 4.5 as well as gate something within the last stretch. So yeah, you might want to get that done.
There's quite a good story in the HW one, even though there isn't a Primal fight in there like in ARR. Then again, most of HW was really well done, so no surprise that they brought out their A game storytelling on a comedy relief side quest there, too. The fights are interesting, though not difficult. You could just get them unlocked to fill out your list so you can roulette them for the dailies (hey, the more variety, the better). There's also some callbacks to past FF games included, as well.
But yeah, the latest announcements seemed to include the entire saga wrapping up with something else being tied to doing them. Depends on what it's worth to you. Just don't expect for them to be quickly done. Some of the quests are lengthy.
I feel like I'm the only one that thought the HW hildi quests were better than the ARR ones.
Not as great as 1.0 but still great fun.
I did the ARR part for the Trials it unlocked, and I think it was possibly the worst part of my FFXIV experience, just miles away from what I find entertaining or funny. But I heard that the Yojimbo Fan Fest fight will probably be added in the game through Hildibrand's quests...

it started out great but current Hildebrand isn't that amusing. ARR was great. HW was OK. I may not finish the latest.
I haven’t don the quests in a long while so I don’t know exactly how quality has changed, but at the very least the 2.x quests are worth it. I really enjoyed those.
I haven't done the ones released in SB, is the story any good? ARR's was 10/10 and HW's was 7.5/10 imo. How's SB's Hildebrand? Also I base my score on how many cutscenes involve Godbert doing some crazy sh*t.
I agree: his original introduction in 1.0 was hilarious but still touching (the second one with Gauwyn the Gannet was my favourite ;)), and was some much needed light-hearted comic relief in a storyline that was becoming increasingly dark and depressing indeed. But his return in ARR kind of went off the rails, in that his humour became increasingly bizarre and cartoonish (I mean,), not to mention a vehicle for fanservice battles like Gilgamesh or FFXII's Mandragora Royalty.his initial return in ARR, he crawls out of a grave after being presumed for dead!
And by the time of his HW appearence, it was clear SE simply no longer knew what to do with him, and just keep putting him on a bus, hoping that one day the bus will take him somewhere far away that he cannot return from. He's still funny, but his antics are starting to wear thin. I hope SE does actually give him a poignant and fitting send off when Shadowbringers rolls around.
Hildibrand is a delightful treat. It is a wonderful questline from top to bottom. But I would recommend going to camp bronze lake and doing the quest "the adventure of the fainting goldsmith" at camp bronze lake first before starting the questline. You'll get a little something extra here and there if you do.
As others have said, the primary reward of doing these quests is the cutscenes. The humor built into each story arc is the best part of it. There are other rewards as you go. Minions, emotes, glamours, and access to trials that you wouldn't otherwise see. But unless that sort of thing appeals to you, then you can definitely skip it.
I would only suggest, that if you do go through these quests, that you don't let yourself feel rushed. On my first character, I was leveling with someone else, and they were in a rush to reach endgame, so I felt pushed to hurry up and do these quests, which kind of ruined my enjoyment of them. On a new character I started earlier this year (which became my new main) I allowed myself to play through it at a more natural pace, and I enjoyed it a lot more. I don't even particularly enjoy Japanese humor in general, but there are a lot of genuinely funny moments in these quests regardless.
4.5 is expected to get a new Hildebrand trial
