If you want to be technical then Chimeras arent born, they are manufactured, so from "birth" they look exactly as we see them. However there is no reason why we couldn't get a "baby" chimera as a runt or failed project.
This... actually isn't true. Chimeras aren't infertile and that is why they also haven't been hunted to extinction. Well, that and they're extremely dangerous creatures. Chimeras have a breeding population, not just in Azys Lla, but across Eorzea. If I had to take a guess, baby chimera (chimera cubs?) look like lion cubs, but with their extra features scaled proportionately.

After doing some digging, we might both be right, however I still firmly hold the belief that a constructed creature would not be able to breed. The game might (sources are thin and some may have been retconned) suggest that the eorzea chimeras (relic and cutters cry etc.) are completely unrelated to the allagan chimeras despite sharing the same model. If, and only if, they were natural, then they will be able to breed, however if they are related to the allagans, then my original post stands true.
EDIT: more digging - the Gorgimera states that the creature was made by a "madman", and some theories float around that the allagans knowledge of creating chimeras has passed down through the ages, causing others to make monsterous beings, much like void summoning. This would give an explantion to the eorzea chimeras being unrelated
The thing is, we have living proof of Allagan creations reproducing. Arachne Eve is very likely an Allagan creation, while the Ixal, as we have seen, evolved from the Ixalion over generations. It's so very unlikely that all the chimera lived this long without reproducing. And, I dunno, they seem in pretty good shape considering the fight they put up!
Arachne eve is very likely not an allagan creation, but rather something much bigger. People have theorised that she is in fact the mother of all spiders in the world(because we have known anout arachne web for a while), and her relation to Mhach is akin to shelob and Mordor from lord of the rings. As for the ixal, the difference between them and a chimera, is that a chimera is literally a chimera. The ixal look to be an original species, one that the allagans genetically constructed to be original, with males and females and the ability to self sustain (cheaper to produce). Chimeras by design (in anything, not just XIV) are monstrous creatures created by fusing the DNA (or just the idea) of multiple creatures together so that they end result shares pieces of the originals. With this violent bonding of DNA, and the incompatibility of the three creatures, the chances of breeding would be slim to impossible
Since we're on about breeding I'm gonna throw this in here but how did Midgarsomrr produce Bahamut and Tiamat? Masturbation? maybe...
As for the Chimera breeding, well lore wise unless it states otherwise they could live for a very long time, I mean why not? there fused DNA's could pro long there life span
or they could be able to breed.
All I know is there is a half goblin half chimera out there and I want to know how! Is it the DNA way? Or the other DNA way with the wink wink at the end......if the latter then damn that be funny to watch.
There are reptiles that can change gender as needed, and then there are reptiles that can reproduce asexually. Most of the latter just end up making clones of themselves, but there are examples like some whiptail lizard species that can do it while still maintaining genetic diversity.
And then he's an alien.
