Oh, there's too many to name. I'll throw Assize out there though, just because it's awesome in both stances and it gives MP back.
Ast : synastry or light speed (i can't choose both are awesome)
SCH : indomitability (like suprême group savior skill)
Whm : assize... (I mean heal, DPS, mana regen... What else ?)
In FFXI it was Regen II(it is basically cheap Cure III(290HP soft cap)
In FFXIV, DIVINE SEAL. Makes Medica/II, everything else super charged and great for clutch healing. It's the get of jail free card. It lets you pass go and collect 200 dollars. It lets you buy a few hotels and those ever elusive utilities.
Assize. Because it looks awesome!
...And because it's free healing or damage, oGCD and returns MP.
I'd have to say Divine Seal is one of my favourite tools that a WHM has. When I first learned it a long time ago I didn't really think I would see much use out of it. But I was so wrong.
Haven't gotten Assize yet but I know it will be great. It seems a tad bit OP in my opinion. lol
AST: Essential Dignity. Lightspeed is a close second.
SCH: Indomitability. Emergency Tactis is a close second.
WHM: Divine Seal. It just makes everything so much better. ;w;
AST: Gravity and Limit Break 3 because they look epic
WHM: Assize it does everything: heal, damage, restore mp. Couldn't ask for more xD
Astral Stasis for me lol. As WHM I just never used LB3, was SO rare. I play Alex normal all the time as I love the battles and how they aren't crazy long, and it's surprising how many times I've got to use it now. I actually kind of hope sometimes that the party wipes when I see LB3 full and a couple people already dead. I literally keep myself buffed up just in case, and the moment I see that other healer and tank go down I pop it, it's just so pretty! Collective Unconscious is my 2nd fav though.
Assize on WHM, god level ability for a variety of different situations
I'm in love with Deployment Tactics. Adlos for all the people! \o/
I can not decide between Indomnibility, Deployment Tactics and Emergency Tactics.
Or maybe its Summon I and Summon II on SCH :).
Gotta say a tie between Assize and Synastry. Being able to either use Assize as an instant mana free AOE heal or a potent DPS increase really makes it a lot of fun to use and rewards White Mages who are really thoughtful in how they plan on their rotations for an Encounter.
And Synastry is just awesome. The amount of single target healing that can be done, either on 1 target or 2 at the same time is just so massive. And it allows for solo healing where in other situations it would take 2 healers to handle the same situation. Really strong ability.
Virus, because Its pretty satisfying to get a virus in right before a tank buster. xD
Collective Unconsciousness.
It just feels so great when you get 750 potency worth of healing in 3 seconds max for no mana or other cooldowns, if people would only not be scared of one another. And then extending it as cherry on top.
Or as Diurnal AST, Time Dilation. Because there is something very satisfying having all 3 regens + a Bole and extending that to a 25+ second duration. Gives me time to like, take a drink and chill.
SCH : almost all 50+ skills (except dissipation). The new SCH kit is really strong. Indo is a poweful tool to top up a lot of people (and it looks like it crits pretty frequently), deployement tactics is godlike if it crits before huge aoe (that feel when your entire party takes 0 damage on Ultimate End, nnnnhg), emergency tactics is niche but really good for those "we need health fast" moment and Broil for obvious reason. And then there's that guy "Dissipation" that ruins everything sadly.
AST : Synastry is probably one of the most potent heal buff ever (more heal potency with free heal on a single target), lightspeed can be really great for those "Oh shit" moment. Let's not forget about Essential Dignity too, instant nuke heal.
WHM : Assize for obvious reason.
Assize is everything that is right in the world.
It's hard to decide but agree that both Divine Seal and Assize are awesome. I'll throw Cure III in there for those instant heal bombs where people are like "Uh did we just take damage?" Great for both grouped together and when people are split into smaller groups and you need to heal a few people at once.
SCH: Indomitability. Totally the best "Oh shit" AoE heal.
AST: Celestial Opposition. Enhance all AST buff to 5 second (Including Lightspeed and Luminiferous Aether) is totally in need skill for AST.
WHM: Assize. Love the damage number of this skill :p
Still leveling AST, and only recently finally got SCH to 50. No favorite for SCH yet, but AST's Lightspeed is amazing, and Assize makes my seat sticky every time I use it <3
As a Scholar, I know we got some really nifty new abilities between 50 and 60, but my favourite Scholar ability is Lustrate. Its flexibility, uses per minute and instant-cast make it my go to ability for difficult situations.

Synastry is by far my favorite healing tool. I find it to be very versatile...I've used it to up my healing potency on a tank so that I could save other CDs for later, but I've also used it on DPS that were near death but were running outside of healing range/didn't take priority over a tank who had taken unnecessary damage. I also appreciate that it's a viable alternative to spamming AoE healing spells, and it gives you a good solution when you know for a fact that someone in your party is about to drop. It allows you to save two people instead of just one, or to heal a recently resurrected party members extra fast while healing other members.
Visually, however, Gravity wins out.
I'd say Tetragramatton. Assize/Divine Seal is a close second.
SCH: all of them?? Indomitability might be my favorite--skill name, animation, and that instant gratification.
WHM: Assize. The only downside is that I can't use it more often. ASTs, please keep me in mind for your Spear trash!
AST: Essential Dignity! But I main SCH so I love the insta-heals. Essential Dignity might be my favorite between Lustrate and Tetra, though. The heal scaling is really neat... And again, the animation is really nice.
I'm very fond of Auto-attack. Why? Because no one expects it.
WHM: Divine Seal. More potency means more HP recovered, and stacking HoTs with DS means more stones can fly too.
AST: I quite like the card mechanics. I like buffs.
SCH: Fairies. C'mon.
It's a tough choice between Succor and Stoneskin for me. They're the two I use the most, and I think their appeal to me in part is the same reason SCH as a whole appeals to me, preventative healing instead of reactive healing....
Succor: I like AoE healing in general over single target, and being able to use it before or during a to add a bit of extra defense to everyone is nice. The fact that it also means overhealing isn't as much of an issue, since it essentially adds on HP for half of it's effect, means I don't feel like it's a waste of MP to use it when half the group isn't hurt or barely has any damage. Also, with Emergency Tactics, it makes for a great just flat out AoE heal as well if things get rough or they already have a barrier up but need more healing.....
Stoneskin: I just like being able to prevent damage. This skill is good at that. I try to keep it up on my party at all times outside of casting during boss fights, or them having aggro, simply because it lets them take an extra bit of damage before I have to worry with saving them. Combined with SCH's barriers, I can easily go half a pull before my fairy even has to start healing.....
As a SCH, may favorite tool isn't a tool, it's my companion. Having a fairy out while solo is a God send. I never have to heal myself unless I did something to stupid like aggro. And when I feel especially homicidal, I'd abuse dissipation for some extra oomph in burst damage.
And of course in a party setting, the ability to split healing without having to use an aoe heal unnecessarily is a huge asset.
AST: Lightspeed and Synastry. Time Dilation is a VERY close second.
WHM: Divine Seal and Presence of Mind
SCH: Emergency/Deployment Tactics and Lustrate. I also like having a healer pet because I get to DPS/focus on other things. ;P Plus sparkly.

Essential Dignity! It's saved so many fights!
I really like my barriers, so Stoneskin, Adloquium, and Nocturnal Aspected Benefic (super pretty).
If the barrier is strong enough, you can outright block knockbacks and status effects (even the unique ones you can't esuna off, like tank swap mechanic debuffs)
SCH: Indomitability: AoE 400 pot heal w/ no mana cost. Powerful. (And yes. It costs one stack..but good sch know how to manage stacks of aetherflow).
AST: Just about any ability. They're all beautiful. But Gravity: -- if you notice, when you cast it, it lifts your character a bit. Fantastic.
Essential Dignity: Crit for 10-11k? Yes. I orgasm. It's fantastic to see those healing numbers. Basically restores someone to full/near full.
Collective Unconscious: I've always had a thing for protective bubble abilities. I honestly don't care that when you use it you get locked out of doing anything else. I love seeing her stand there - arms apart - keeping the group safe. Buff other abilities but leave that animation alone please.
Benediction cause when I fuck up with cleric stance, I can still save him with that.
Ed/Tetra cause they aren't affected by healing (de)buff and they are really instant (not like bene)
I have a love/hate relationship with Synastry. I love how I can split heal both tanks and get a 20% heal increase but at same the time I wish the 20% increase wasn't tied to it because I feel like I waste half of the abilities use when I only need the heal increase.
Lightspeed is very fun and satisfying. My favorite is as a tool to top everybody off after a big hard AoE in thordon.
My choice is plain and simple: Regen.
Seriously, it's the absolute bread and butter spell in the WHM's toolkit. If you don't already love it, then by all means learn to.
Visually, my favorites are Holy, Collective Unconscious, Celestial Opposition, Aspected Helios, Succor and Helios.
Mechanically, my favorites are Assize, Synastry, Medica II, Indom, Divine Seal, Adlo.
