Because time does not stop because you got a phone call.
Just like real life, you digest food even when you're asleep.
In XIV it's been like this since 2.0 alpha, and I think it was that way in 1.0.
Everything on your character advances even if you log off. Less bloat for servers.
Ur character popped it all out and got hungry again while u talked on the phone.
I'd suggest NEVER EVER answering the phone again it's just not worth the final fantasy Gil costs of food. In fact you should just go and throw your phone in the bin right now!!!!
because the food timer is tied to the server. say if you eat and start out with 30 minutes and then log out for 15 minutes and come back you should have 15 minutes left.
Because if the food timer persisted at it's current point when you logged out or went afk, all the Culinarians would sell too little food to survive. Then they couldn't raise the gil to buy food or materials and would slowly starve to death themselves. Do you want the chefs of the world to die of starvation? Do you?
I would'nt give SE that much credit when it comes to little things like this. Its probably because of the same reason why when we click a quest we have to dismount. Or when we have to dismiss our companion before we can queue for a duty. There's still a bit of clunk left in the system that they've slowly been working out since release, so hopefully we'll get there eventually.
Interesting, cuz in ffxi buffs that persisted from zoning (pro/shell/food) actually were saved when logging
Most likely they didn't want players to exploit the longevity of food. Let's say for gathering. Player X just need 30 Gather and this food cost 5k, however the unspoiled node is only up every 24 game hours which means he can only use the food once.
In theory if the timer stopped when logged out that 30 min food could last the player 4-7 unspoiled node attempt if he could just log in and out, sparring time to regain GP or using Cordials as needed.

Your character exercises while you are away, goes out on dates with npcs, goes gambling at the gold saucer. Khan goes out and kills things, all that "rested" exp is actually just because your character went out solo while you were away.
They get hungry
In 2.0, your food buff expired on death, 2.1 changed it to how it is now. Culinarians made this same claim how their income goes down when this was announced, but even after it happened, food still sells very well. The reason isn't really surprising, most people simply didn't use food in 2.0, now the investment is much more worth it and people use it.
But yeah, buffs running out while logged out has always been here and it's not something they are going to change. I can't think of any MMO right now where buff timers stop on log out. Kinda surprising it took tihs long until someone complained.
With regards to buff timers continuing whilst logged out, I would guess that the server merely stores the time that the buff was applied in your character data and then simply compares that time against the server clock to determine remaining duration. Having buffs pause whilst logged out would require the server to also store the time a player logged out and perform a further calculation to check timers. This would cause more character data bloat and we all know how tight SE is with that sort of thing...
This has been answered before and it's deliberate. Anyone that's played WoW knows how infuriating it is when people on mounts talk to NPCs and no one else can even see the NPC because they're lost inside the mount... Forced dismounting to interact with things is a very good design choice.
Do you have any idea how large Behemoth or Adamantoise mounts are? Do you really want tonsee 17 players on giant mounts, crowding quest npc or vendors?
