So, I might be guilty of skipping every single cutscene, ever to exist (outside of 2.55), but I always try to read up on them afterwards. I can't find lore based on our Jobs, however. Any links or insight?

You can re-watch all job related cutscenes (and all cutscenes in general) in the Inn and if you want a quick summary of job lore then you just need to go talk to your Job Trainer. Their is also summaries in the journal for each quest.
Are you after a general overview or the specific story line for each Job?
Job summaries in ONE SENTENCE EACH!
WHM: You inherit the power of a famous Padjal to calm the forest.
SCH: You learn the tragic history of Nym and befriend a Nymian fairy.
BLM: You help a malligned Black Mage save the souls of his friends and stop a Voidsent incursion.
SMN: You defeat a dark Summoner who has been murdering other Summoners.
WAR: You tame your inner beast, and help your mentor to tame his.
PLD: You train in the ways of the Sultansworn and learn the truth behind a disgraced Paladin.

BAM! Done. ;)
How would it be the continuation of this Job stories? As far as we know, all the Job trainers somehow will earn the AF2( based on an screenshot of what looked like the MNK trainer, with the gear of the AF2 )
I mean like, why each job exists and what each job was... well, what was their purpose in the past and why so few of them are, around (they are exceedingly rare compared to Classes).
Edit: ...found them, but....
“In days long past, there existed an evil clan and arcane art known as black magic—a potent magic of pure destructive force born forth by a sorceress of unparalleled power. Those who learned to wield this instrument of ruin came to be called black mages, out of both fear and respect for their gift. Yet great power served to corrupt the judgment of mortal man, and so he unknowingly set out upon the path of ruin.
Adventurers who take the black will become agents of devastation, capable of annihilating those who oppose them through little more than the force of their will.”
That description though O. O. Wouldn't expect a Warrior of the Light to, yea, be one of them.
PLD: Paladins are Sultansworn, the Sultanate's elite guards. Their organization is stated to be rather small.
DRG: Dragoons are Ishgardian soldiers, so DRG are rare to find outside of Ishgard. Specifically, you become an Azure Dragoon throughout the DRG quests, of which there is normally only one.
SMN: The art of Summoning was lost with the fall of Allag (I think). Either way, the villain of the Job Quests is a SMN going around and killing other SMN.
SCH: Scholars were Nymian tacticians before the Tonberry Plague. None exist in the present day.
NIN: It's an imported art, so there are few Eorzeans who know about and can use ninjutsu.
Now for the ones I only know about secondhand:
WAR: They come from Albathia's Spine in Ishgard's territory.
MNK: They're from Ala Mhigo, currently occupied by the Garleans.
BRD: ???
WHM / BLM: Both White and Black Magic were outlawed after they led to a Calamity (the fall of Amdapor - 3rd Umbral Calamity?).
Technically there is one SCH remaining, the tomberry you help and that is still in the palace, you see him in the HM version. But yes, like SMN it's a forgotten art reborn with archeological researchs.
BRD were special gridanian support units supposed to boost the moral of their troops and still throw arrow at the face of their enemies, I don't remember although why there is only one ( and suffer from PTSD or something because his friends died ), I think it's because the mogs are the one teaching the songs so only a few are chosen by them.
Also the PLD give their teaching to almost anyone capable and deemed worthy of using them it seems. All PLD aren't sultansworn.
WAR were banished because they were going berserk, WHM and BLM were banished after the 6th umbral era ( Water ), by the elementals for WHM and by the law of Ul'dah ( I don't think it is known if it is before or after the fall of Sil'dih )
The best is still to ask to all the job quest givers and read again the quest dialogues, they will give most if not all the informations about the jobs.
While Surito is a remaining SCH, he was stewing in the rancor with the rest of the tonberries until you finish the SCH quest line. The cap gives him away for non-SCH, but unless you do the quests or pay close attention in Wanderer's Palace (Hard) there's no indication any SCH are left.
PLD aren't all Sultansworn (you're technically "knighted" as a "Free Paladin," not Sultansworn) but the Sultansworn (Jenlyns) still have to approve anyone being trained in their arts and hunt down traitors. From the feel of Ul'dah, I doubt many aspiring GLD fit the bill.
MNKs are disciples of the fists of rhalgar, A cult that become popular within ala mhigo, the idea was that you could attain the strength of rhalgar himself with discipline and personal strength. They became popular enough that the king of Ala mhigo feared the cult gaining too much power and influence so he had the MNK temple raided and killed most of them. The garleans attempted to defeat ala mhigo for a while before ala mhgo was weakened by rebellion against their tyrannical king. (apparently gaius had some influence in this.)
BRDs came about from Gridanian archers. The story goes that the Archers of Gridania are trained to observe everything in battle and never miss a thing as the role of the archer is to attack the right place at the right time to turn the flow of a battle. This also meant that the archers had to watch the slaughter of battle, the deaths and the tragedies unfold without ever looking away. Having seen so much, to cope with it some sought to express the pain of see all this through song. So some archers of Gridania began to sing in battle.
The generals discovered that these songs had a positive effect on their soldiers and a negative effect on their foes. They inspired bravery and resolve in allies and doubt in enemies. Several armies tried hiring professional minstrels to provide the support but discovered their songs didn't have the same effect. The reason was simple. A bard must understand the pain and loss. They must be able to empathise with the experience so their songs resonate with their souls. This is the heart of where the power of their songs come from. That's why the Archer and Bard are tied together.
That's roughly what I remember of the origins of the Bard. Moggles were thrown in their too a bit as Moggles understood the nature of the power of song and were great lovers of music.
Just to add to the scholar lore; Surito states he can no longer summon his fairy, Lily (a.k.a. Eos/Selene), after being turned into a Tonberry. Judging by him and all the other Tonberries (including Marberry) do not use any magic (that's not tied to the rancor) I think it's safe to say that the Plague of Nym removed their ability to use magic and that as of 2.5 their aren't any more SCH in Eorzea excluding the WoL.
Paladins: OH MY GOD THESE PALADINS AREN'T ACTING VERY PALDINY HERE LET ME SHOW YOU HOW TO BE PALADINY -beats up Sultansworn-
White Mages: Ok Forest is trying to make a choice of either destryong everything or being a chill elemt---DUDE YOU DID NOT JUST TRY TO DESTROY EVERYTHING -beats up Elementals-
Bards: I...was born...to siiiiiiiiiiiiIIIIIIIIIIIIIIIIIIIIIIIIIIIING~!
Dragoons: The Azure Dragoon stole the precious thing, are you a bad enough dude to get it back?
Scholars: -staaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaarestabstaaaaaaaaaaaaaaaaaaaaaaaaaare-
Summoners: LOL ACTUALLY TIED INTO THE STORY BEFORE DRGs WERE LOL -EXPLOSIONS ҉ -
Warriors: RAAAAAAWR I'm having an existensial crises GRAAAAAWR
I don't really know much about the rest so nothin...
BLM: You're helping Ququruka (blm imprisoned in the Marasaja pits for 100 years, same place where Raubahn is now) redeem himself for causing his three beast tribe friends to die and get turned into a voidsent for using black magic recklessly. Your coming fulfills a prophecy they all discovered 100 years ago.
SCH: You're helping the learned warrior Alka Zolka rediscover Nymian knowledge and artifacts. You learn that Surito Carito and fellow scholars fell to the rancor 1500+ years ago while trying to cure it, which originated from the sea. Nymians panicked and locked the sickened inside WP out of fear and hate.
BRD: You're helping an old war hero put to rest his nightmares of breaking rank and having his companions killed during the Autumn War 80 something years ago. At first he helps you learn arts that moogles taught him, but you give him courage to face his demons.
WHM: Padjals are having you re-trace A-Towa-Cant's footsteps in an effort to learn the elemental's version of white magic. People in the woods doing dumb things made the elemental of nihilism angry, and it's your job to take Kan-E's place with A-Ruhn and Raya-O to calm it down. There are only so many white mages because the original version of white magic from Amdapor is too dangerous to exist in large quantities, so the elementals limited to only padjals and you
SMN: Y'shtola's sister Y'mitra is trying to rediscover Allagan summoning techniques, and you go on an adventure to take a piece of primals and make your own egi. Crazy summoner is also doing this, and killing researchers in Mor Dhona and other summoners, tryin gto gain power. He got corrupted by an ascian--people speculate that it was Loghrif because Tristan summons Belias-egi
MNK: Erik is a learned man from Ala Mihgan that puts his life into researching the receeding aetherflow caused by the Calamity. At first he thinks you and your monk friend are idiots, but he realizes that Windargelt is trying to rally the Ala Mihgan resistance with the power of "chakra" (which Erik thinks is just aetherflow) and wants you to reason with the man. You pretty much take all opportunities from Windargelt to gain more chakra, and you turn into a final blockade between him and "success".
DRG: Estinien stole the Eye because he thinks Alberic failed as an Azure Dragoon. You get picked to be special instead and that made him mad and pretty damn murderous. Somehow he survived and now we have to be friends.
I find it interesting that Jobs are always connected to a certain culture.
AST: Sharlayan
BLM: Unnamed Black Mage Civilization
BRD: Gridania
DRG: Ishgard
DRK: Ishgard
MCH: Garlemald (adapted by Ishgard)
MNK: Ala Mhigo
NIN: Far East (primarily Doma)
PLD: Ul'dah
SCH: Nym
SMN: Allag
WAR: Lohengarde
WHM: Amdapor
Estinien was on pretty friendly terms with us for the duration of the DRG Job Quests, up until the end when he was corrupted by Nidhogg and convinced that he needed to slay Alberic for the mistakes that ended up destroying his hometown - and even then, the only reason he fought with us is because we stood in the way of his revenge on Alberic. If we assume that Nidhogg's madness passed after we defeated him, there's no reason for him to not treat us cordially when we meet again. Or us, him, for that matter. We're forgiving like that.
As for why the Ishgardians would be on good terms with Estinien in spite of the fact that he stole such a precious relic - well, they never new. Alberic kept the whole thing on the down-low to protect Estinien. I don't know if he was able to cover up the relic's theft, but he DID prevent people from learning that Estinien did it.
