Would probably be that Kirin actually has a fairly consistent look for being a mythical creature and that monster is just another Kirin inspired monster: google.

OP's link was technically a dragon but yeah a lot of Kirin's have a dragon look, I bet the fish scales really lended to the dragon look - along with the tiger head and people ran with that lol.
Some Kirins having dragon like qualities is actually pretty old though, can't remember when it came about but some of China's dynasties have dragon "Qilins".
Or in better words, but... dragons! :D
Don't get me wrong, I think the Kirin mount looks pretty bad ass, I'm just not a fan of how the four beasts' aesthetics always bleed in (not just FF14) and they all end up looking like some sort of dragons..
For Kirin, I would really enjoy something that looks like Haitai, like an actual land animal, maybe not as fat :P

I don't recall hearing a Kirin is based from a cow. Edit: Dragon-ish Kirin can be found at least in the Jin Dynasty 265-420 - can't remember this stuff yay wiki lol.
For this mount, they simply used the model of the most traditional way Kirin is depicted in ancient art.

Anyone notice since the patch everyone and their dog has Kirin now. Back when I got mine it was so much more rare.

I Generally only buy Asahi beer so I forgot what the Kirin bottles looked like. Now that I realised that is the Kirin from the Kirin Ichiban beer bottles, I must go get one. Can I get a "Call Beer" option to go alongside with the "Call Mount" for when I get one. In fact I only just realised the Accomplishment for getting the thing was called Ichiban too.

Personally, I'd like Sleipnir to get wings. With it being a cash shop mount, and there still being no confirmed flying horse mounts, I think it should at the very least be brought up to par with the other new mounts. That and.... I personally find the unicorn/warhorse/elemental horse's design awful. <_< Sleipnir is certainly overbuffed, but at least his skeleton is anatomically correct for a horse >_< .... The others all have joints in the wrong places...
So yeah, if we ever come to get a flying horse, I hope it is Sleipnir/has Sleipnir's body structure! I can dream!
After watching the Benchmark, the Black Chocobo has the Chocobo Porter hat. Even though there were some scenes where it was flying with the group, I wonder if it's actually just the flying version of the Chocobo Porter.
Unless we're getting that barding... I want that hat.
