All three have their merits.
Botany has logs, seeds for gardening that sell fast. Mining has ore, soil for gardening. Fishing has, well, fish.
However, fishing does not have 'unspoiled nodes' nor can you gather shards/crystals/clusters. Miner and botanist get the special nodes that let's them gather certain special items like grade 3 Thanalan/Shroud/La Noscean soil and so on.
If you level both, you can follow the 'cycle of gil' as some people I know call it. Meaning, you just go from node to node to node.
I'll give you a secret hint, beastman dailies that involves crafting.....
Goldsmith, and blacksmith has been profitable for me. Also collecting large stacks of crystals are nice.
I think mining is probably more profitable in the long run, but it can get very boring very fast.
I use my miner to farm up ores for my goldsmith, and in turn process those ores into ingots and the ingots into jewelry. By doing it all myself, I turn a couple of rocks valued at 300-500 gil each into HQ items I can sell for 50 times that in some cases.
However, there's a huge market for the raw ores for the crafters who are too lazy to go pick at rocks themselves. Silver, mythril, electrum, and cobalt will all fetch a pretty penny for the effort.
Either miner or botanist, doesn't matter which. The bulk of your gil will come from shards crystals and clusters. The vast majority of unspoiled nodes aren't worth the time and effort to go for.
Miner. Besides the ore (which has a much larger market than logs) it has more cluster spawns than botanist. And the * mats are generally more used for min as well.
Having both is better, though, as you can hit all the nodes then.
One thing I've noticed about fishing is that you can't completely target the money earners. There's an element of randomness that cannot be removed. But for mining and botany, as long as you have the right gear, you can get 100% success on your designated item.
Also there are a lot of trash fish only good for leveling desynth (part of crafting) it seems. So if you must choose one, don't choose Fishing.
Miner and botanist are about even, with neither REALLY being more profitable than the other.
Fisher actually has things that are worth more actual money, with some fish worth hundreds of thousands of gil, but the trade-off is you're COMPLETELY at the mercy of the RNG for fishing, and your inventory space will be at a premium.
I'ono. The bots seem to make a pretty good chunk of coin just farming shards from early nodes.
So.. The gathering classes that give you access to shards/crystals (That's Miner and Botanist!)

I'd have to say mining is the most profitable. I'm currently leveling mining now and i am amazed at how many of the things I mine are worth more than 100gil each. Compared to botany where only a handful is worth that much.
Additionally, mining allows you to get soil; which gardeners need. There's really not much need for carpentry/food (all needed botanist) whereas mining stuff is needed for leatherworking (alumen), metals and alchemy.
Overall I'd say miner gives you more clang for your gil..
Don't forget to check the 'Timers' for current gathering requests from the GC. If you can get all 10 HQ you get a nice chunk of seals and exp. points!!
I would say the cycling of 1-star/2-star nodes from both botany/miner gives the best profit.
Profit can be multiplied by crafting them into quest items or consumables.
Mining has made me the best return, however your comments on fisher are in my opinion why fisher needs to be reworked, yea I know im straying off topic, but that empty offhand slot still glares at me constantly, and all those baits on my inventory deserve better answers from SE than "Ya know" PS3, sosf.
I leveled craft so I can gear my self up, Gathering was a part of it but it depends. you might be able to profit from crystals, darksteel and rose gold mats. Fishing is nice when you can catch and sell a bunch of silver sharks or Alchemy them and sell the Fish oil. Botany like fishing and killing things can support cooking and there's a lot of food that really sells for a lot, but you need to get it up to 3-star to really profit from cooking. Then there's crystal farming. Otherwise lv 50 crafting, even if you don't use them makes it cheaper to repair your gear and they last longer than what the npc does.
It's more beneficial to have both mining and botanist, as that will allow you to cycle through unspoiled nodes, access whatever mats are in hot demand, etc. Though really, gathering kind of pales in comparison to spiritbonding if gil is your only concern.
I would suggest taking up Desynthesis if you prefer to do mainly battle content. Getting a craft, such as Armorer, to Lv30(?) will unlock Desynthesis for that craft and you will be able to turn gear you obtained through battle content into cash. There is some luck involved with this, but it is possible to turn a single piece of equipment into hundreds of thousands of gil. Alternatively, just turn your Battle equipment into the Grand Company and buy items with the tokens to then turn around and sell, although this isn't as profitable.
