Ninja is the job that is represented by a bat so we know Dark Knight won't be. Paladin and Warrior both have their PvP animal as their respective mounts so it would probably be the same thing for Dark Knight. Now it is just a matter of guessing what animal that will be. My guess is a wolf.

I don't know, a lot of these answers are funny, but I think we should consider the possible lore behind the job. For example, I've called the Avis because I expect DRK to be an Ishgard job, and the Avis is.. well... dark, I guess? I know I don't have a lot to go with it ;)!

Hmm, Job specific emotes in FF14, that'd be nice.

As for a DRK mount, perhaps a scorpion, to fit in this the insects of the new expansion as well as the pseduo poision-esque theme of Dark Knights. That's if it's meant to be a bit more original, as Bone Dragons for DK's have been done before, and bats are already taken by Ninja's.

It would have to be the Darkest most Fowl Creature, that no matter how high your level was, what foes you've bested, this Creature was always there to restore the balance and keep mankind in it's place.

I think they will be popular enough even without a specific mount but well I tried to think what this could be but it's pretty hard..

Dragons will be all overs the place so the DRK getting a dragon too would be too much.
PLD and WAR have "normal" animals as mounts and they are connected to their PVP gear look.
The connections PLD-White Lion (Hero, Leader, Light, Honor etc) are intuitive but the WAR-Bear are not (..rawr? being reddish?), at least to me, and the only things I see true for both is they have big powerful looking animals. What kind of animal could be connected with a DRK that for sure is not like the traditional FF DRK? Someone proposed the hound and it's not a bad idea as it can be black, ferocious and connected with darkness but what about his probably blood related skills? Bats are NIN's, insects would be eew.. other than that the DRK is sometime proposed as an opposition of the PLD so a big black feline would seems appealing.

I would have said wolf but with fenrir it wouldn't be really unique.

Maybe a crow ? It would fit well with a flying expansion.

I wouldn't be surprised if there wasn't one, but I could picture them riding a massive dire wolf with a coat as black as a stormy night and eyes like balefire.

Someone already said this but a Boar seems really likely. And remember the mount would be based off the PvP armor it has, most likely.. I could be wrong and they could eventually make some classes/jobs have the same animal, but doubt it. Crow is taken I believe by Bard? Bat is Ninja, Wolf is Black Mage, all of which people expect DRK's mount to be (if it gets a mount) So to me, Boar seems the most likely :)
