For the same reason that Defiance from Warrior also can't.
Just remember to turn it on again.

Maybe it's because I main MNK, but I've frequently forgotten to put Defiance back up. Luckily you can't fight for too long before you notice you're not gaining wrath. I have no idea why SE didn't make these buffs persist through death. Monk fists used to fall off as well, but were changed at the same time as food (perhaps they were somehow tied together in coding...). Seems like it should be an easy adjustment to make, and contrary to the sentiment of a few of the above posters it wouldn't actually inconvenience anyone.
Shield oath most likely does not persist because mp is needed to activate. Raise during battle and pld needs to wait for regen to apply again. Fists do not. That said, I think it should stay up. I'd suggest eliminate the mp cost but that opens the door to pld changing between shield and sword constantly for increased dps.
Any good Paladin is already doing that though. You switch to Shield Oath when you need to grab and hold aggro, but you switch to Sword Oath to increase DPS done.
But I agree that the most likely reason this is not already a feature is because of MP being a resource for skill activation. If that is the case, should Defiance not disappear upon death then? Seeing as it costs no resources to use.
The one thing that I really want from oaths is that they shouldn't interrupt combos.
It's a QoL change that really doesn't have a good reason to not be implemented. The MP thing is a different reason entirely (or it should be). Chances are you're going to activate the stance before you engage in a fight (or as you're making your way back/waiting). Even being rez'd during combat isn't really a significant reason for MP to be the source of why you lose the buff from death.
At the same time though, it really isn't a big deal to not have (yet). It'll probably change, and most likely won't take more than an hour to make the change and test, but don't expect that to happen for a long time. QoL changes for specifics, like this one, generally don't happen until they've run out of things to fill the patch notes with.
More than sustain through death. Defiance/shield/sword oath should re-scale itself when you level sync, instead of merely being removed.
A huge annoyance for those of us farming fates.

At least forgetting Defiance is easier to notice because it prevents you from being able to use Infuriate, which is a common fight opener for WARs, and having Wrath also causes a visual effect on your character and it's easy to notice when that's not there, either.
But regardless, I see no real reason for these abilities to wear off on death if the MNK's Fist abilities don't.
TBH I see no real reason why the Oath abilities have to cost MP, either. All that does is force a PLD to have to wait about 10-15 seconds after a "home point" revival in order to be able to put his buff back up, which just increases the chances that they will forget to reapply.
It's not really a big deal, but maybe that's because I'm a healer. I always stare at hp and (de)buff bars. But for the sake of consistency, I don't see why Sword/Shield Oath and Defiance can't persist through death like MNK.
The MP cost to the Oaths will likely prevent them from persisting through death forever. Defiance, on the other hand, doesn't really have a reason not to persist.
Letting shield oath and defiance persist through death would be a really nice quality of life change, for sure.
On a somewhat related subject, I would love it if songs, specifically swiftsong, would persist when changing zones.
