I did this with a stack of buffalo hides back when they were 25k a pop so I feel your pain. And yes I had whatever crappy shit I was trying to sell highlighted the game decided i wanted to sell the item listed below it.
If only there was a confirmation window to prevent this kind of thing.

And yes the UI functionality is god awful.
But I've never sold something on accident lol that's just dumb, it's not hard to not mess up, just be patient. Or sort your god damn inventory, what's a cap doing near materials? And how did you not spot the sell figure go from 3 digit to 4 digit, or if you prefer 980 to 6316, i'd be like "holy crap these logs selling for odd amount, oh no im an idiot n clicked wrong thing"

input lag is there because of the server side confirmation.... to get rid of that (and I wish they would) would take some time, because a good few things would have to be recoded.
Honestly they really need to sort it out and bring it in line with most modern MMOs. The majority of actions should be client-side so we can actually have a lag-free UI.
I wonder if the reduction in server communication would reduce latency in general too? No idea how this kind of thing works.
