I'm quite enamored with Blacksmith. I don't even know why, really. I just have the urge to stand about in Blacksmith gear while idling most of the time. <_<
Though I suppose its versatility might be one of the reasons. :p
As for an actual skill, probably Careful Synthesis II or Byregot's Blessing. Hard to choose one, they're both so good at what they do. ><
None of these things are skills. They're classes lol.
My favourite SKILL is either steady hand or great strides.
My favourite DoL class is GSM.
My favorite skill is probably Tricks of the Trade. I never use it any more, it is still on my hot bar, but it is nice and shiny every time the condition turns Good.
Comfort Zone for sure. It gives you positive CP returns and puts you at a fake CP deficit in the beginning so you can use more Tricks of the Trade with Hasty Touch and not wasting any CP.
In WoW they were called tradeskills right? Maybe that's what the OP meant when he said skill? Tricks of the trade, steady hand, and great strides are ACTIONS aren't they? Not skills...
My favorite action is currently Steady Hands II, because I just got it, and LOVE using it with Waste Not, and Basic Touch.
I'm going to have to say GSM is my favorite DoH. GSM, and CRP seem to require fewer steps, and GSm has fewer materials from other DoH (self sufficient). I actually wish there were GSM gear at more levels, and enjoy that the stones needed are often easier to HQ since they're lower level. No complaints about CRP.
I'm frustrated by the number of steps it takes to create items for ARM and WVR. For whatever reason, BSM has been a bit tough too (usually need three materials from 3 DoH).
I'm actually not bothered by Cul at all. It has been the easiest DoH for me to decide how to level. Yes, there are lots of materials required, but often they're raw ingredients that don't require too many steps... or if they do, I just skip that recipe. There are easy triple turn in leves, that I can gather my own materials for (chamomile tea, corn meal, apple juice). If only CUL were more useful it might be my favorite.
I find ALC a little confusing and annoying, since you constantly need very low level items, and it's not that useful. Some of the leves are great, but enough of the materilas are a pain.
LTW hides are annoying.
Weaver is my favorite DoH Class.
As for Skill, it's Careful Synthesis II.
My favourite skill is, bar none, Steady Hands II because of its utility with pretty much every other skill that I use. I'd have to say that my favourite class is blacksmith. There are a couple of reasons for this. First, like Raminax said, they have some pretty cool AF (if it weren't for the comically huge saw, carpenter would be a close second); second, I don't know what it is, but I romanticise the concept of the sword as an extension of the wielder so making fine swords is pretty great, which is completely subjective, but there you go. :)

My favorite skill? Byregot's Blessing. Second place isn't even close. You hit 50 CRP and the game is like, "hey, congrats, here's an easy button." My favorite DoH...hmm...ARM, I guess. It's got, in my opinion, the niftiest looking equipment set.
I do love BB, but I don't need it for 90% of my crafting. Great strides + Adv Touch do the job on any synth below level 43.
I didn't notice your typo at all, I'm not that attentive to detail ;p I just thought it was funny the OP meant to ask about DoH or class, but called it skill, and then someone else said that actions were skills.
I think everyone understands and enjoys the intent of the post - I just thought the (mis)use of terminology was funny. I would not make a good grammar cop.

GSM would be a close 2nd for me, for the craft's not the skill though.
With weaver and GSM at 50 you can make most of the items you'll want to use to spiritbond for grade III crafting materia.

Alchemist would have to be my fav atm ^.^ and skill wise it would be Byregot's Blessing with Comfort Zone in 2nd place.
So far, as my highest is WVR 31, my favorite skill is Tricks of the Trade. I love it when I have one of those synths when it procs like crazy.

Tricks of the Trade. It made crafting feel so much more dynamic as a craft could vary a little bit each time (within limits).
As for class (since some people also mentioned that), Weaver. It makes a lot of useful stuff, the cross class abilities are good, and best of all the quest line (mainly the guildmaster) is pretty entertaining throughout. Early on he asks you to make 12 bolts of cloth and says "Tedious, to be sure, but you DID tell me you were ready to suffer" since the box that pops up when you pick up the class says something like "Are you ready to suffer?"
GSM and ARM had amusing finales (okay, GSM had the headbutt - ARM had the most badass finale, especially compared to LTW), but LTW gets the honorable mention after WVR simply because the guildmaster was hilarious. "If you meet them in your travels, I want you to flay them and a make me a pair of shoes out of their hide so I can stomp them into the dirt every day."
Careful Synthesis II because true talent requires focus and careful attention to detail.
Any Ulda'n street bum can come in and craft a pair of Linen Slops. But it takes a master to tailor your personalized Vanya Robe of Healing HQ. (Regardless if you can breath in it or not.) Style at any cost.
Otherwise, it wouldn't be "Haute Couture", it just be Paris Hilton by... Paris Hilton.
Yes, Weaver is my favorite DoH. :) I loved the quest line and I wish I could re-do it.
My favourite DoH: Weaver. The Weaver AF set looks so stylish (as it stands, Weaver quest line is all about being stylish too!). Sadly, it was also a class I had trouble levelling, due to having to resort to non-standard methods of progression for levelling any DoH class. I skipped Velveteen, Woolen, and Felt phases since the materials were too expensive - what a shame, because I don't believe this is an intended playstyle, but due to how the market is set up, I had no choice. For any other DoH class (taking BSM as an example), you could progress normally - from Copper, to Iron, to Steel, to Mythril, to Cobalt, without needing to skip a phase, since the materials aren't as pricey as Diremite Web (Velveteen), Fleece (Wool and Felt), or Snurble Tufts and Natron (Felt).
My favourite DoH skill: Gonna list two here, since I feel they work well with one another that I can't say one is my favourite without the other - Great Strides and Innovation. I simply love bursts of quality. I am working on my CRP now, but I can see Byregot's Blessing easily becoming my favourite then.
