Just hit 50, now what?

I've seen people spamming for things like Chimera to get relic pieces and stuff. How do I get those quests?

One thing I did was about every 10 levels I would re-visit areas I had been to before, to see what quests may have opened up thanks to my newly achieved level. Give it a shot. (I say this because quests like the A Relic Reborn, relic weapon quest-line, don't open up until you achieve a certain level. Other quests won't open up until you've done other quests. For example you can't get the quest to advance even further in your Grand Company rank until you defeat Ultima Weapon in the story-line.)

If you finished the story line and beat Ultima Weapon then you're in the end-game. You can go to Vesper Bay and talk to Nedric to start relic quest. Chimera is in Mor Dhona, north east of Camp Dragonhead but it'll take you a while before you need to kill it. The tutorial for that is here:

You can also farm Ifrit HM and Garuda HM for weapons but GC weapon will suffice for Titan HM which is the last quest to get Relic weapon which is a lot stronger. To unlock Ifrit, talk to Thancred. To unlock Garuda, beat Ifrit and talk to Papalymo. To unlock Titan, beat Garuda then talk to someone (no idea cause I haven't received the quest, still farming Garuda).
Besides that, run AK/CM/Praetorium to get Darklight gears or if you're rich, buy the HQ crafted ilvl70 gears which is better than Darklight sometimes. AK is an early part of relic quest and you only need AF and maybe Ifrit weapon to beat it (that's what I did).

also I found a level 50 dungeon by chatting up some girl hiding behind Waking Sands and she sent me to La Noscea where I got introduced to a level 50 dungeon. Are there any others?

You must be talking about Wanderer's Palace. There's no other optional dungeon.
