In a hurry to play the game during the Open Beta phase, I let the game choose my character's last name by randomizing it. Now in retrospect, I very much dislike the name. I was wondering if somewhere down the line if a name change would be an option, via a paid service, or if perhaps something could be done sooner rather than later. I don't know exactly how things work on Square's end. Just please let me know as soon as you can. Thanks for your time.

There is no way to change your name at this time, not even through Fantasia (which is dumb -.-)
Your next move would be that if they allow server transfers, make a character on a server you'd like to possibly transfer to with your current name (may require a friend helping you with this with their account), then transfer over and the game will prompt you to change your name since technically the character name would be in use. Problems with this: Pay money to transfer to a server and lose all your friends D:
That or you're gonna have to wait for name changes to be implemented (no sign of this and has never been a choice in XI), or reroll :/ Hard knock life...
There are lots of players requesting a name change feature be added. While FFXI didn't have one, most other MMOs do. I do believe that SE will put one in sooner rather than later.
It took GW2 almost a year to implement it so I'm sure it's coming.
