Hunting logs

So I thought that there is one hunting log but I guess there are multiple. Where do you unlock these and what kinds are there?

There's one for each class, and one for each grand company. To unlock new tiers for the class ones, you must finish the tier you're on and be high enough level to start the next. For the GC ones, you must finish the tier you're on and promote to the next tier of ranks.
