I want to know how can I learn how to mine, chop trees, and other things?

You have to complete your level 10 class quest (the class you chose when you started your character). After that you will be able to join other guilds...gathering and crafting included. You actually have to join the guilds to begin, so you won't be able to join the guilds in other cities until you can get there.
