In 1.0 I had the most expensive barding set, however I can't find it anywhere.
I've checked my inventory, retainers, Calamity Salvager and my chocobo but can't find it.

Is it currently on your chocobo? I know the barding I had in 1.0 is what my chocobo automatically started with.
Nope, my chocobo is wearing the original low level barding
It's in the abilities screen, may need to activate the ability to have it fight alongside you first though iirc.
I finally found this myself!
Actions and Traits > Main Commands > Companions
In the Companions window you can select the barding for your chocobo.
