I just bought a new motherboard so I'm getting an option for 7.1 audio. Since I hear that 7.1 audio generally sounds better than 5.1, are there any plans for 7.1 audio in addition to 5.1?

Most likely no. 7.1 isn't that well supported and your room/speaker layout would have to be perfect to get the full effect of it.
In my personal opinion, 2.0/2.1 is still the best audio setup for a desktop PC...now if you were to have this in your living room with your computer connected to a TV that would be different.
Music would still be in 2 channel stereo, masked to 5.1. Audio effects however would be would use the 5 different channels depending on where is the sound source.
Ah now 1.0 did support Dolby Logic IIz, which adds 2 more channels above the front left & right channels, to give an added perception of depth and height, it worked really well for Ifrit, Garuda, and Nael Van Darnus's battle(it was a nice advantage for listening for lunar fragments)
Technically it's 7.1...but really it's not.
