Did they show Arcanist gameplay?

Nope. Trust me, otherwise everyone would be talking about it.

From what I saw, and I was trying to spot anything out of the ordinary (there were a few small yet funny things), the only classes that were being played during the cast were the Gridania classes plus Gladiator.

This won't really answer your question, but only thing about Arcanist/Summoner mentioned in Live Letter V was:

Q9: You mentioned previously that you're working to include summoner in time for launch. Is it going to make it?

Also if anything, unless they want to restrict it to in-house testing only we may not see it until launch.

I would wager however they would want player feedback as well so if they did add it...I'd say in the later stages of "Closed" beta possibly phase 2 or maybe 3. Phase 4 is open beta so I would assume since almost all features will available at that time, it would be available for play.
