People i'm with usually pronounce it as paist.
But i say peestee..
Cause i'm a rebel.
And i think it's cuter..
When people see peiste and try to say the name, I think of "The ass who is level 90+ blocking my way to Revenant Toll"
Well I say something closer to 'Pasty' personally...however, I believe the correct pronunciation is is closer to Peest (Like rhymes with beast)
I've always pronounced it Pee-est-ay, but I am almost positive that I am pronouncing it incorrectly.
'ei' usually sounds like 'ay' as in 'weigh'. So perhaps it is Pay-stee, Pay-stay, Pay-steh, Paste?

After Googling the word, I found this: Cnoc na Péiste, which is perhaps where they got the name, since they're supposed to be mountain-dwellers (I think?).
That part of the mountain name is pronounced something like "Pee-stuh", probably with very little emphasis on the 'uh', almost akin to the "Peest" mentioned above.
Kind of like how you'd pronounce "paste" but with a bit of an I trilled in there... Like if you were going to say paste in a bad fake british accent.
I was actually curious about this awhile back and tried to look the word up. The closest I could find that actually fit the context was Peist Given that it is spelled there with no E at the end I just figured I would just ignore the E myself.
Though if you look at one of the links on that page for stories containing Peists, it shows it written (in gaelic) as Payshtha (linn-na Payshtha or lake of the peist) which would probably make for an acceptable pronunciation too.
I say it like Pest =P Lol after doing the magian trial in FFXI to kill like 800 I REALLLLY hate thems ; ;
