Are there any tests done showing the effective differences between the 2? Looking to start melding some materia onto my gear, and wanted to know if i should go for the +5 on the craft stats, or more towards ~17 vit.

Stats have no effect on melding success.
It's a fixed percentage based on item level, item quality, materia level, materia quality (i.e. how much it gives within the range it can), and number of materia.
To give yourself the best chance of success, use the highest level gear you can, HQ if possible, and affix the materia from lowest to highest.
You can multi-meld naked, though, and it has no effect on succes.
I think the question was more "Should I meld VIT, craft, or m.craft" not "Which one of these will increase my meld rate".
VIT will increase your quality gains, craft/m.craft will increase your success rate. There's no hard and fast rule as to which is more effective, so you should base your decision on your own gear + preferences.
Contrary to popular belief, and my previous thinking, action success rate appears to be DLVL based only.

I merely regurgitate what is officially posted. Granted, that information is eons old, and it's entirely possible that it's outdated.
Thanks for the reminder. The effect of DLVL is so large that craftsmanship's seems negligible...
