Magic Accuracy
Sorry for the noob question but what exactly is magic accuracy? I've noticed sometimes I cast Thunder, for instance, and the Thundara combo doesn't trigger. Also sometimes my spells get interrupted completely. Are those the only aspects to magic accuracy or is there more?

If you check your log you'll see that a mob "partially resists" (or completely, but not often) your spell. This will prevent the combo from triggering. Magic Accuracy affects this. Since the combo damage from Thundara is so potent, THMs and BLMs will typically shoot for 470 M.ACC or higher so that the combo works most or all of the time. This number is before party bonuses, but can include the effects of food or BRD's Minuet of Rigor, which frees up more gear slots for additional potency and INT.
M.ACC also affects how easy it is to land Sleep and Sleepga.

as far as spells getting interupted that has nothing to do with m.acc
There are three situations that will cause a spell to be interupted
1) Selecting the spell a second time while it is casting (if you have that option toggled on in the game config)
2) Movement. If you move the spell will interupt that includes being buffeted around by monster abilitys with knockback.
3) Damage. If you sustain enough damage while the spell is being cast you will be interrupted. At the moment there are few counters. The chief among them being well.. not taking damage while casting. The cc spells sleep and blizzara can and will buy you the time and space you need to cast. Out side of that Sanquin will make you immune to spell interrupt from damage.
Sanquin is the Oh shit button in the thm/blm arsenal. And it has saved my sorry rear more times then I can count.

Shield blocking will also prevent spell interruption.
However you then have to equip shield (so no 2-H weapon) and be in active mode.
