Big Fish every time gets away with level 90 gear

I have completed the quest Feast of Famine and some others quests inclunding rares fishes many time ago with level 80 gear, i cannot remember the big fishes are gets away near this. Now i have a big problem with some fishes like "The Sinker" (level 50 - Middle Hathoeva River South Shroud) gets away 5 times in a row before i catch. Today i am trying the "Charon's Lantern" level 50 and 3 times in a row, nothing. I cannot understand, we are working a level 90 gear with 2000+ both gathering and perception and a fishes with 370~ gathering requirements are leaving every time. I know we have a RNG to catch, but we need many requirements to meet and to take a chance, like climatic and time, burning 550 GP in the "fish eyes" many times (to 3 try), and the fishes, are leaving. Its Boring and frustating becouse if we like complete 200+ Big Fishes, need 10 years to complete all. Have some any tip for me?

No tips. Just most big fish, yes even the ARR ones, have a guaranteed escape percentage.
