For me mostly Ambiance (Screenshots & Music), Sight-seeing/meandering about the game world, Storyline Quests outside the MSQ where you return to those zones, Side-Quests, Fates.
I am going to be extremely blunt: nothing unless you craft. It's more of a "make your own fun" type of experience, and after so many years I hardly leave town if it's not to gather resources or run a map. Occasionally I'll hop on a hunt train. I have completed every quest available, and don't have much reason else to do so.
FFXIV is not really a game you exist in, which is fine because it shines spectacularly in other areas.
Zerging on fates and joining a ridiculously large army of warriors of light obliterate giant piƱatas of weekly currencies called Elite Marks.
And sometimes taking screenshots of all the places that only look interesting from very far away to post to people you know to pester them about joining the game due how totally beautiful Eorzea is.
i just spent a couple hours doing every yellow quest in the game. so probably that? actually was pretty enjoyable tbh
Fishing!
EW Fishing spot is pretty comfy and the fish description at Ultima Thule is pretty interesting :)
EDIT: Especially this guy

Story (main and side quests including class quests), beast tribe quests, gathering, sightseeing, maps, hunts and fates.
A lot of content is intentionally put into instances but maps, sightseeing and hunts were added to give the open world more purpose, because it was understood how lacking it was.
Blue mage! :D
if you want a MMORPG where absolutely NO programming was wasted on one and done maps and dungeons:
