A bit ridiculous IMO. I mean, it is what it is, but still. I turn on my bluetooth headset, and the game immediately crashes. And that stuck me in a 3500 login queue. Ugh. Game needs more error handling.

I've no idea what that even is. No, I'm not.
Many people have reported game crashes upon switching audio devices. Happened to a friend of mine as well.
Don't do it.
Audio switching has been an issue since version 2.0 - you need to figure out where you want your sound to come from before you log into the game, and set that up ahead of time.
I've noticed that it really only happens when you remove the sound source entirely, like unplugging a head phone jack or USB dongle. A soft switch, using Windows audio changer, from one already plugged in source to another source, may have better success. I switch from my heavy Void wireless to my light weight blue tooth gym headphones to my permanently plugged in sound bar that way without a crash. If I unplugged the sound bar while I was in the game, though, it'd go poof.
Check event viewer for a crash report and see what happened. Report back if you like, it's probably a driver related issue on your end. I swap between devices regularly while playing the game and have no issues. That doesn't mean there can't be issues, I just think that it might be something happening on your computer that conflicts with FF14's sound controller.
