When I cycle through my available time options, I only see "Eorzea time" and "local time" and "server time" is there something I'm missing here? How do I display "Earth Time?" I don't know what "Earth time" is.

When it says "earth time", it means your local time.
'Earth Time' is the same as 'Local Time', it's your own time zone as set on your computer/console. 'Eorzea Time' is the in-game sped-up time, and 'Server Time' I believe is the time zone for that server group (as in, EU servers would be UTC). So any time the game states 'Earth Time' it will be same as your local time.
Hmm, so something I have noticed is that times are off for me by an hour, and my computer time is actually off by an hour. So, if I change my computer time zone, will it also change "earth time" at the gold saucer?
I am pretty sure the game is actually pulling the Local Time/Earth Time from your system, so it should do it.
And it won't do anything else except change the shown Earth Time for the stuff, as all the events still run off of Server Time, it's converted over to your Local Time for conveinece.

I'm just thinking "Earth Time" is when you eat a Titan EX Landslide and, indeed, fall into the earth.

Japan doesn't do Daylight Savings Time at all, and other countries start and stop on different days.
Some folks swear up and down that the game takes everything related to DST into account - but FF14 (and FF11 for that matter) are always off by an hour in wintertime for me.
