Can I start a steam's trial account on PS5?

You don't need PSN plus to play FFXIV. A steam account is separate from a PS5 account. You would need to create a playstation account for FFXIV to play it on a Playstation 5.

Free trial accounts are locked into whatever the are started on, the only way to cross play the account is to make it a full retail account and purchasing the game on PC and PS5.
