Is there a way to properly bind everything?

Can I reset the binds and bind all of my skills to different keys on the keyboard along with redoing everything myself?

Not if you are trying to setup your key bindings like FFxi (presumably this is what you are asking?)
The majority of keys can be, but if that isn't enough you will need a piece of third party software which allows you to manually switch/bind keys within your OS.
