Playing On Mac?
I have a subscription, the base game, and the expansions through ShadowBringers on windows. I am visiting family for a couple of weeks, and only have access to my mac laptop. I understand that I need to buy a separate game code to play Mac, but I am pretty confused as to how. On the Square Enix website it says that if I bought ARR on Steam, then I need to buy the expansions on steam too. To my knowledge, Steam doesn't provide the option to buy the Mac version of ShadowBringers. So, if I want to play on my laptop, does that mean I would have to buy ARR AND ShB again? It doesn't quite make sense to me to have to pay another $60 after I already paid that on steam, so I am looking for any help. Thank you.

SE treats the MacOS version of the game as if it were an entirely different platform like the PS4/PS5 even though in reality it's just the Windows client running inside a customized WINE skin. As such yes to play on MacOS you would need to buy everything again.
If you're running on an Intel-based Mac laptop, you could look into installing a boot camp partition for Windows and then using your existing FFXIV for Windows license to play once everything was installed. But if you're on M1 then your only option is to fork over the $60 to get a Mac license for ARR/HW/SB/ShB (though reports have been coming in that performance on M1 is pretty darn good despite not being officially supported).

If I spent the 60 bucks would I also have to pay for another subscription? or does one sub cover both clients?

One sub covers all clients.
