I'm currently using trusts to get my jobs from 71-80 and wondering if I should either focus on one job at a time or get all my jobs through each dungeon i.e. all jobs through Holminster Switch then Dohn Mheg and so on.

I would say focus on one job at a time. That way you can stay familiar with that job and how it performs. It might be different for you though but that's how I have been doing it.
Get one job to cap so you can start doing some endgame content if that interests you then mix up your roulettes between getting tomes and getting EXP.
I'm assuming you're talking about second, third, twelfth, etc jobs here, rather than your first time going through the ShB MSQ.
In that case it doesn't really matter which way you do it. One method isn't faster or more efficient than the other. Personally I recommend leveling things is gear-sharing sets. Get all your healers to 80 together, all your tanks together, etc. That way you can consolidate equipment and get rid of full sets of pre-80 gear all at once.
What I do is level 1 job at a time. When that job hits cap if any other jobs utilize the same gear as the job that I just capped then I will level the rest of those jobs next so that I can clear out the leveling gear shared by all those jobs from my inventory then move on to the next set of gear. Because of this I made DRG and NIN a couple of the first jobs I capped because those jobs only share accessories with other jobs. The rest of their gear slots generally are shared with nothing else.

If you're doing it with trusts then (if you haven't already) you do need to be running the dungeon multiple times before they can even access the next level.
How many jobs are you talking about? All of them?
I suppose it doesn't matter. Anytime I am leveling multiple jobs I just look at it as one giant exp bar shared between all of those that are being leveled. I am currently taking my remaining jobs through ARR>HW>SB etc. I have tried leveling them by role since they share gear, but didn't like that after getting to a certain level, they collect dust while I level the other jobs. Then I tried leveling all of them in the increments it takes to get to the next job quest (around 2-3 levels), and this makes me feel like I am not spending enough time with the jobs to actually learn them. This is further compromised if using roulettes to level since they sync you down, but you also don't want to ditch the exp they provide. In any case, what is driving me kind of batty is once I start getting a grip on the job I'm leveling, I have to halt the progress to level another job.
In short, I am still trying to figure out the best way to level multiple jobs, and it's probably going to be different for everyone. That's why I am only taking mine to 60, and I will decide after that which one to focus on. It's just more of a grind that I can tolerate right now. Working on just one job is the best way for me to have fun with it, actually learn it, and remain interested.
Most important, and the biggest constriction with leveling multiple jobs though is the lack of glamour plates! ;)-
Depends on how easily you get burnt out with doing one dungeon at a time. It will as others say take a few runs to level them up to do the different dungeons, however you'll be running through them with all the different jobs and that can be taxing if you do it all at once. Maybe a few jobs or just one at a time would be better. *shrugs*
Picture it this way it can take you 3 run throughs (just pulling a number for an example) to take drg to hit it so you can go from Holmeoster to Dohn Mehg.. times that by 17 jobs.... thats running through that same dungeon 51 time ( again not the exact amount of times just the guestimate for saying 3 times running through) at once. It will be the same yes even spread out but not as stressful since you'll keep going instead of straining to do it all at one time.
Have you beat ARR? I ask because if not, focus on that and that alone with one job. If you have finished all the expansion and are caught up to 5.35 - then I would, for non DOL, DOH classes - one at a time, if DOL, DOH - do all and all at once, keep them in sync as they can make gear that all can use at once.
When it comes to gear, get generic gear for that class, that is "all classses" or "BLMRM....." so that you only maintain one set of gear across multiple classes.
