When going through the character gen, I made a "Thoughormtere" uhmm.. blackmage. But, I wanted to make a White Mage. The starting Char Gen dint say " hey, this guy here is a healer and this guy over here shoots fire!!"
..did having my character start as a Blackmage change my basic stats? or can I just switch to a whitemage weapon to become a conjurer?

Just switch to a conjurer weapon and you'll be a conjurerer, no harm done.
Each class has its own set of attributes and relocatable attribute points, so it does not matter what is your "starting" class is. Changing class is as simple as switching weapons, and to turn into job you equip Job Crystal (after you done the quest) in the corresponding class. Job shares class attribute, so BLM stat is 90% similar to Thaumaturge (slight variation).
To clarify, starting as a particular class in no way affects your stats on another class. In other words, the stats for a class are the same regardless of what class you selected when you created your character. The only thing that your original class selection affects is your starting gear.
