I had previously seen the pricing on some emotes I was interested in to be somewhere around $5 now they have been raised to 7, what is up with that? Kind of bummed the price had risen without warning.

You probably looked during the anniversary sale. It was on the front page of the lodestone for a long time so I'm not sure without warning is a fair assessment. Here's a link to the lodestone posting which has since slid down to the second page.

They tend to do a holiday/end of year sale and the anniversary sale has been pretty consistent. So if you are willing to wait your emotes will probably go back on sale.
