Left handed character

I am left handed and would like to know if it ever be possible to make your character left handed one day it a small detail but it would be fun to have it !!!!!

Probably not overall - it comes under the umbrella of "adding more stuff to the character creator" which they don't seem to be able to do - but summoners get to be left-handed already! :D

The major hurdle would be the data needed to make mirror versions of many of the animations.

Flip your monitor around, have it face a mirror. There you go left handed character.

this is something i'd like very much

I think this would be nice, but considering (as was said above) all the animations would need to be flipped, including in all cutscenes, I think it's probably not worth it at the moment. I'd rather have the devs devoting that time to improving gameplay and jobs.

The animation data itself shouldn't take much space at all if I'm correct. And even if it did, it's not like you're sending the data between the client and the server anyway. Probably the biggest hurdle would be the mirroring itself and checking that the animations still look good.

Dragoons, scholars and summoners are left-handed.

Well animation wise, yes. Summoner and Scholar hold books in right hand and write with their left.
