Game enters "Not Responding" state randomly without error

Have been having this issue since 3-4 weeks ago.
It started randomly: I had not made any hardware or driver changes prior to it.
It only seems to occur after several days of system and/or game uptime. I will usually close my game when I sleep, but leave my pc on.
The game will simply stop responding, do the spinny circle thing, and CPU usage is a flat 0% in the task manager, where it must be closed.
When relaunched, the launcher appears okay, I can enter login info, but as soon as I hit play, the game will (usually) open and immediately enter of state of Not Responding.
Additionally, when I try to reboot windows after this has occured, it will hardlock on the Rebooting screen and must be shut off physically.
This has only not occured once (today) - I was able to relaunch the game without issue. Other games can be launched okay, it is only XIV that will immediately hang.

It leaves no error / fault message in Windows Event Viewer so I have no idea how to begin troubleshooting it. Because of the infrequency/randomness in which it occurs, I am having difficulty troubleshooting it as well.

About 1 week ago, I updated my video drivers in an attempt to fix it, but it is still occurring.

CPU/GPU temps are within normal range when it occurs; CPU 40-50C, GPU 59-70C.
I have run sfc /scannow without result, and run memtest86 on my ram w/o result. crystaldiskinfo shows no issue with my hdd/ssds. FFXIV is on my main C:\ SSD with about 55gb free space as well. I don't have anything overclocked.
I don't know what to do, please advise.

You mentioned you leave the computer on for several days. The computer should be turned off from time to time. Does this crash occur only when the PC is left idle for days?
Additionally, the problem with the PC not starting could be a symptom of another issue.

You may want to try running a PC cleaning program such as cc cleaner as the issue may not be with Final Fantasy XIV itself. Another option you can try is to delete everything Final Fantasy XIV related from the pc and uninstall it. Once done, please reinstall the game.

Yes, I leave my pc(s) running 24/7, except in instances of long absence or bad weather.
It only manifests after several days of uptime and is solved by a reboot - but to reboot it forces me to physically shut the pc off.
I had thought perhaps hardware error (hence memory/system tests), but they're all clear, and it is only XIV that is hanging/affected... so I'm unsure.
The pc continues to work fine for other games/functions w/o issue, apart from hanging on shutdown. To clarify, it will only hang on shutdown/restart after such a hang in XIV - there is no issue booting though. I realize XIV may not be the root cause of it but I have nothing else to go on, so was hoping for some sort of diagnostic guidance beyond "run ccleaner + reinstall" I guess, but if that's all there is it can't be helped.

I get the occasional DX11 stack crash as well, but that's been ongoing since the start and has persisted through 3 pcs / numerous drivers, so it is not terribly offputting. I just don't get why it's hanging all of a sudden. I guess I'll try reinstalling if it occurs again.
