All the quest locations/quests themselves/monster locations/ect would have to be changed, and that's a TON of work to even attempt. They originally made the 2.X areas smaller because of how ginormous the 1.X areas were, and you didn't even have different regions in those maps, just winding path after path after path.
We're trying to prevent things from happening to Eorzea. We still have a lot more to explore in it. And it's normal for older areas in MMOs to be sub-par when comparing to new areas, so there's no real reason besides 'people are bored with it', as your post is coming off to me. Not saying you're saying these words, but that's how I'm seeing this.
Not to mention they'd have to make separate areas for each of them because it'd mess up the story entirely to the point the /only/ way to reconcile it would be to have the areas split between pre-Calamity and post-Calamity. Which would divide the playerbase in a way the dev's likely don't want given how much they've pushed in the past to force veterans back into those old areas.

I will not say no to them giving us updated textures for those areas. Half the issue is that the texture details are /really/ low quality and end up looking like mud next to the crisper, larger textures on the First.

When you state you want a Calamity, which are giant world changing events, it's hard not to take it as you wanting something like WoW's Cataclysm. Updated textures and assets are another matter entirely and something you'd find a good deal of support for, less so wide sweeping changes.
Redoing the old areas with new textures to match ShB I can get behind. Having a calamity no, that would totally destroy and split the playerbase. You would have to have a pre calamity instance for the new players going thru the story and a calamity instance for those who have completed the story and gone thru the calamity.
Yeah, you're bored of old stuff and want something new because 5.0 was amazingly done. Do you know how much work still goes into reskinning anything?
Not to mention you flat out said 'Pls new calamity and better mapping design!' when I originally posted before you edited the post. The whole description of your post is going way out there for just a 'reskin'.
It won't happen - SE has little need to completely reconstruct the ARR zones simply to 'match' the larger expansion zones (also, it's subjective saying 5.0's zones are 'better looking', as all I've seen is environments that are mostly 5 shades of brown, or lurid high contrast colours (the insipid violet trees and grass around Lakeland is an example, but it does actually work at showing how alien the First really is), not helped by the eternal Light bathing everything in an unnatural golden glow. The Calamity that destroyed 1.0 and served as the lore reason for it's replacement with ARR was a once-only event, it simply will never happen again gameplay/technical wise, that's just being realistic.
Now, SE may add to the existing zones (which they've done in the past), but they will not replace them with huge open high detailed ones as there would be little benefit to a lot of cost (to say nothing of having to take the game offline for an extended period while they changed the zones over). No, this simply will not happen I'm sorry to say.
I think the existing ARR zones could be preserved but updated to allow flying. That would obviously necessitate the parts of those areas we cant see from the ground to get some updating and it could allow for areas only reachable by flying to be added to older zones for higher level content. It's nice when older zones have relevance at higher levels. Doing it this way keeps everything that currently exists for low levels and the zone layouts for those quests completely intact. It's only the surrounding and currently un-viewable parts of the zones that would need updating to make this work.
