I can't be the only one that feels that this easter event should have been when FFXV was released and not now when there is barely any FFXV hype left?

Hard to say. I think it could be released when collab started in FFXV (so a little bit earlier) but well, if they decided to do it now - so be it. I don't see any problems with the fact that they do it now and not when XV was released.
I suspect it was meant to coincide with the second tranche of DLC and FFXV reaching its final form. Since that all ended up getting scrapped releasing it alongside Episode Ardyn is probably the best they could do.
this event was likely timed to get players to come back during their free login campaign to complete said event. its also RIGHT before the free server transfers AND theres literally nothing coming to FFxiv until...may or june (where the hell is my Seiryu mount trade patch)? Most likely just here to keep a steady (but slow) stream of content until the expansion.
It is likely there to help break up this very long dead period and also to capitalize on players returning.
However, it's just as likely that it simply took about this long to do. If you've never worked in a large corporate office, Corporate Bureaucracy is THICK. And it's even worse in Japan. It can take forever to get things moving even with the advantage of already owning the properties.
It wouldn't surprise me in the slightest if it took a year just for the FFXIV team to get approval to even start working on an FFXV crossover. (For context, Square Enix created a committee specifically to protect the integrity of mainline Final Fantasy games after the the bad press FF13 got). Between submitting a proposal, developing a crossover plan, presenting it to those in charge of FFXV and the company's FF committee, getting approval to use major characters and assets from, what was, an ongoing mainline Final Fantasy game and only THEN being able to start work on actually building character models, submitting those models, the quest writing, etc for review. then putting it all together...
Combine all that with the restructuring going on in the company and the much higher priority of other tasks in FFXIV. This content may have only been finished just last year and they decided to use it to pad out their dead spot before the expansion.
Its most likely to get player back playing and also to get players to try or pick back up ffxv. I am just glad its finally happening and hoping for more crossover events in the future.
ideally? should have released same time as the XV side got their XIV event. what really happened? probably production/logisitical/dev delays prevented it from being ready in time (4 person mount mechanics/programming).
