Just a idea
So we get new battle classes however....
We should add in the following gather and crafter.
Gather
Huntress for gathering select and rare hides
Farmer grow and raise animals 2 butcher
Crafter
Painter to make paintings and to add paint to select parts of items so for example paint part A,B,C
Fusion/melder --- breaks apart items by pieces for example piece C could be a horn and add part C to a select item of their choice.

A Disciple of the Land hunter/farmer type class called 'Shepherd' ('SHP' for short) was once planned for FFXIV back during the original version (1.0) of the game, but nothing ever came of it besides a class logo and it's name (and a locked and empty Guildhall in Falcon's Nest of all places). Given said Guildhall was omitted in the 'rebuilt' Falcon's Nest in Heavensward, I'm taking it as evidence that SE have abandoned all plans for such a class sadly. :(

By nature of how crafters and gatherers are very dependent on leveling all other crafters and gatherers for vital cross-class skills, I feel like adding any more of these jobs would be very complicated, and difficult to pull off in a way that doesn't make the new jobs immediately redundant/useless. Endgame crafting/gathering already requires so much leveling, is there a large part of the community that wants that to increase significantly? I don't think so.
I think it'd be better to just get more creative with the AF sets in new expansions. Crafters, for instance, already craft items that don't quite fit their names- A lot of mechanical items and firearms are made by blacksmiths/armorers, so maybe their next AF set could be engineer themed. Alchemists are mostly known for potions, but they also craft a lot of plant-based items, so maybe they can have a gardener themed AF set. I dunno, I just feel like adding new crafters/gatherers isn't really going to achieve any new class fantasies that couldn't be pulled off all the same with glamour, since all items that could be crafted/gathered by new jobs can already be crafted/gathered by what we have.

The problem is that if devs were to make another crafting or gathering class, they'd effectively have to do that by finding a solution to a problem that currently doesn't really exist. Sure, there could be a class dedicated to farming hides, but that could just as easily be done by any combat job going out and killing mobs. I even suggested it before; called it Scavenger, said it could farm specific points for leather scraps or other crafting items that are normally attained through combat, even have a story that could provide insight into the history of various places we wouldn't otherwise get with any other stories in the game, but it's still a solution to a problem that can barely be considered a problem at all.
Other things you suggest are things we already have. We already have a painter that works in Idyllshire that works off of our Sightseeing Log. Melders work off these items called Materia, which is made from items we convert (break apart) and can be melded to gear for the benefit of an increased stat. As for the Farmer, I'm fairly sure it got scrapped because making a minigame like that would just be a waste of resources and once again, a solution to a problem that doesn't really exist.

I thought they were planning on making the crafters more independent so you don't have to level multiple classes for skills. Either way, I don't think painter would be added unless it has a way to help in combat. Cul/Alc make consumables and the rest make gears. Painter has to do something useful as well and not just for glam.

I doubt they'd ever add another crafter class, as has bern suggested the cross class skills would be a nightmare to redo.
A gatherer I could see being possible, but as they already scrapped 'Shepherd', and that we're apparently getting some kind of farming side content for existing crafter/gatherers, I think they've already decided against that.

I feel retainer ventures were meant to fill the need for new gathering classes. Combat retainers can be sent out to gather almost any hide, tooth, or claw that you can obtain from the open world. This could be expanded of course but adding a Skinner class or Salvager would feel redundant at this current point. Adding in new crafters would necessitate rebalancing who gets what recipe and would just cause more problems than its worth. And as others have said, existing features already fulfill some of those perceived gaps (we can desynth and meld already). I'd personally like something new that mimics the Monster Rearing from FFXI but tied into the Companion system so we could raise monsters to fight alongside us, killing two birds with one stone by scratching that beastmaster itch.
