The first is Cherubfish, next is Fangshi and the last is Snailfish. I don't have the other 2.
It looks like they all are from unspoiled waters node, that's why they are missing entries in fishing log.
Cherubfish, Fangshi, Eternal Eye, Soul of the Stallion, Snailfish
So do these "Unspoiled node" fish count towards the "I caught this" Achievement?
Yes, anything in the guide counts.
