i imagine the potion just dictates the healer gear versus dps gear you recieve
It would boost your Arcanist level (which both Summoner and Scholar use). It would also mark all your Scholar quests as complete and give you healer gear.
Summoner would be level 60, but would not have any of the skills that come from job quests. All you'd need to do to get your SMN up to speed is go through all its job quests, and get some suitable gear.
EDIT: If you haven't unlocked Summoner yet, then you'd still need to do that quest, too.
