Hello
As a completely new character, would I be best served levelling on a Server without bonus XP?
I am a WoW veteran and levelling alts caused me to outlevel content and skip zones entirely. Neither of which is something I particularly wish to do on my first playthrough.
Any advice would be appreciated.

In FFXIV leveling your first job is done mainly by following the main story quests including instanced content. It is not possible to skip main story quests (without a skip potion you'd have to buy separately) and all the instances are level capped, so you can't outlevel them. I've recently tried WoW so I know what you're talking about, and you don't have to worry about that happening here! Extra exp may help you skip some additional sidequests, which you can then do later on the second job you're leveling (all quests are only available once per character, no matter how many jobs you level).
Due to the class system in this game, the value of the XP bonus is higher. The Main story questline (MSQ) that you need to complete to unlock all the game features and continue into the expansions will take you to all the zones and will scale you down at points if you are over level.
But as I said classes. You get to max level with your main, finish the MSQ but then you start another class and you are back to level 1 except, unlike making an alt in WoW, all that quest content is gone. So you are left with other things - dungeons, fates, hunt log, leves to level your other classes.
That's where the XP boost would be handy. You get a base boost on your alt classes just by having one be higher but if your goal is to catch up with these people who have been playing for almost 4 years and have maxed every job that's something you want every advantage to do.
I deliberately saved quests during my first run to 50 back when ARR launched and there isn't nearly enough left for a 2nd and 3rd class. The challenge log (unlocked at lvl 15 I think in Limsa Lominsa) has been VERY helpful in extra XP. But if I wan't playing with folks I'd known before from WoW I'd be jumping at the chance for another XP bonus.

During the early levels in particular (up to around 20 or 25, maybe more on servers with the extra bonus XP) you are likely to over-level the main story quests if you focus on just a single class. If you don't like that, you can avoid it by unlocking a second class (or more) and alternating quests between them since each class levels separately. (As an added bonus, this gives you a good opportunity to try out multiple classes. Maybe you'll end up really liking one you hadn't expected to and decide to make that your main class going forward.) But as mentioned, in dungeons your level will be lowered to the level of the dungeon (or near to it) anyway, so being over leveled really only affects the open world portion of the game.
As with most such games, as you get up higher in levels, it starts taking quite a bit more XP to go up a level, so at some point you'll likely want to pick a primary job to focus on through the rest of the main scenario.
