I really would like the option of using crossbow, short bow or long bow because of its attributes and not just because of the aesthetics. A ranger should be able to have a weapon choice for speed or crit or for long versus close combat with supposedly better crit chance etc.
Shoot if they put in SAM i hope they have it so that they equip 2 different weapons. A 2H katana which would make them a tank job called shogun. A Katana and Wakizashi perhaps for Samurai so that way they can dual wield. (Im a huge fan of dual wielding)
For example Dual weps for jobs that can use single handed weapons. Nin has it by default but make any other class have it as well. I use to love having PLD Dual wep in FFXI Burtang (mythic) and Excalibur (relic) yes. versus maybe be able to equip some minion to give traits. As an example. Kain minion , give a stat boost to Jumps or enable Jump x # per instance....I want a Kefka minion !!!
If the multiple weapon options end up giving different stats/effects, I can totally see people figuring out that one is absolutely better than the other, and everyone end up asking for the ability to glamour one weapon type over the other.
That'd make the system of different weapons having different stats/effects or affecting playstyle like someone mentioned earlier kinda pointless though. Might as well leave the system as it is and just add different looking weapons (though that'd require them to work on different animations depending on how different the weapons are), make the different types of weapons purely aesthetic.

Wouldn't mind seeing a class that makes use of Ioun Stones as a weapon. I just don't think Final Fantasy has ever had a class close to that, unless it was in a very obscure title.
Clubs, Axes, Hammers, and Scythes all currently lack classes as well. Unless we want to cross off Scythe as a DoL weapon. A job for Rods/Wands/Scepters wouldn't be bad either. CNJ/WHM and THM/BLM both make use of them in early levels but moved on to staves it seems.
