MNK vs WAR + tanks
So dueling came out and I was trying to practice this match up.
I know there's a huge disadvantage for monks but is there really any chance to pull a win over a warrior, if both players used their class to the fullest potential?
What about fighting against PLDs or DRKs?
Also, what's the best thing you can do in a shatter setting against tanks?

War is truly a problem in 1vs1,
usually when I had to face one of them regardless of my job I try to make his Berserk wear off running/hiding/CC.
As MNK ... in that little arena... mh I dont' know if Steel peak + Fist of wind when he pop could save you.
as melee also ou have to manage your burst too, NEVER burst if he has PushBack / Vengeance up.
If he pop both of them and BloodBath it's not even a fight, it's just a suicide XD
Just random hints, I'm neither a WAR nor a MNK :(
Ah you have a pacification, you can use it too to negate his burst.

On paper, no, it is entirely a losing match up. If you're pretty decent/good and they're really bad and don't know how to use PvP abilities (or even their PvE abilities for that matter, WAR in Defiance is almost impossible to kill with just 1 dps) you can come out on top by playing smart (purifying full swing/kiting their buffs/stunning at the right times). Your chance of success is pretty much dependent on you first softening them up to maybe 60-75% and then bursting them down within 1 or 2 stuns before they have a chance to react.
Tanks pretty much beat every DPS 1v1 as long as they're smart with their cooldowns simply because after a DPS does it initial burst the tank can easily outlast them.

So far, I've won the vast majority of my duels on Pld, but I don't think tanks are unbeatable. It highly depends on how many CD's they have available at the start and how strong the dps burst is. Some of my duels have been within a range of as little as 10% hp. Monks, in particular, have a serious advantage in Axe Kick.
What it really comes down to is how effectively you can engage your burst while nullifying the tank. Pacify, in particular, is king in duels, because it leaves your opponent helpless. Worse, they might not even know they're helpless, because they're not locked in place with a stun. There's no obvious signs of the pacification until you start pushing buttons that don't work. I've seen it turn the tables on a lot of duels. Joined with oGCD stuns, and you'll be better at locking down your opponent than a Pld, because you can still burst while doing it. As far as Tank buffs go, keep your eyes open. Drk's have the biggest disadvantage, because you can actually knock Darkside off of them (it's categorized as a buff, not a stance). One-ilm punch could come in handy if you're careful of how you use it.
As far as the individual tanks go: War s vulnerable if you can interrupt it's burst + hp regen. Without that hp regen, they get punished hard. If you learn their burst and the signs to look out for, you can handi-cap them. Holmgang? Purify and make some space. Fell cleave? Pacify followed by stuns. Binding them, especially, is a nuisance. You can lock them in place and just wait out their buffs. They're definitely the hardest tank to deal with, but you can make their life hell if you know what to look for.
Drk's are vulnerable in that their PvP utility is quite limited. They have a strong burst, but not enough hp regen to sustain themselves if the dps is intense. You can also debuff their strongest boon if you have one ilm punch or something similar.
Pld is tricky. They get a decent regen off of cross-traiting bloodbath with sword oath, so interrupting that is a big handy cap. Pld's also got very log CD's, so the odds of them winning consecutive duels is unlikely. Their burst is also quite short. It is effective, if used with Full Swing, but they can't push for extended periods. Any drawn out fights also show their terrible tp sustain. Their stuns are a double edged sword, as well, because they can't sustain dps while they stun. Pacify is their greatest asset, so look out for it. In the end, if you can push a pld to stun then you know that they're in trouble. Press hard and hope they don't have HG up on CD.
