I have a feeling Machinist was originally going to use the off hand slot, but then they overhauled the entire concept and scrapped it
The Main/offhand thing always felt like somethign they didn't want to expand on beyond 1.0 (and now, paladin). the OH slot could be used for secondary things like BRD quiver, MCH lunchboxes, offset NIN daggers, the like. The older the game gets, the more of an archaic design it seems simply because they don't want to move from it (specifically the PLD shields). It could have been another fashion accessory for the true end game for all I care.
Going by their initial previews, there was no indicator of this. They had intended to use multiple attachments through abilities (think stances), but that idea was scrapped in favor of gauss barrel. Though it still bothers me that their lunch box stays the same no matter what, while BRD quivers changes to match the bow.
On DoM and DoW classes off-hand slot is for shield. So the first way is to think about how the new jobs can hold a shield while fighting with the main weapon
It doesn't have to be a shield. It can be something you hold in your secondary hand, or a compliment to your weapon, like the aforementioned quivers, or enchanted objects. Of course for the latter, it means that the job animations need to be designed with it in mind (since a lot of the casting animations are done with both hands holding the staff)
