I'm not sure right now what I want to specialize in as far as crafting goes. So I am wondering what people are using as far as an omni crafting set goes and what melds? If possible I would like to craft 2 star recipes so I am wonder what stats I should try to reach in order do that somewhat comfortably? I do have about 150 of red crafting and gathering scrips as well.

You *will* be melding to reach 2 star stats with the general level 60 gear. It's doable though, especially with food.
Personally, I'm aiming for the i180 (RCS) MH tools, with i170 everything else. I've already gotten 7/8 MH tools, and I've made one HQ OH tool (and one NQ, which did NOT make me happy). I plan on making the LTW OH next, so I can start crafting whatever gear LTW makes for the crafting and gathering classes. My Gatherers are being fully kit in the i180 RGS gear, not just the MH tool, because there is no i170 option for those i180 pieces.
Even if you are Omnicrafting, you still want the best stats/gear you can get. That means making the class-specific gear, at least until SE comes out with another generic suit.
