You will always track the most recent 5 quests you have. If it is bothering you, you can go in to your Journal and select 5 quests that you want to follow, or select 5 Crafting leves, which will just highlight the guildleve npcs then.
If you're talking about removing icons for quests you haven't taken yet, there's no UI fix for it currently.
There is actually an option to remove ALL icons from the map.
Since by lvl 50/60 you usually have memorized where the shops, moogle mail, aetherytes, etc. are, you can just hide all icons and enjoy looking at your empty map again :)
I'd like to see options added both for hiding quest icons of quests significantly below my level, and also for quests above my level. (The later is annoying when working on low level alt classes. I'd like to use quest icons to find quests I can actually do, not be shown level 50 quests when I'm on a level 18 class.)
I'd also like to see more variation in the quest icons. Currently, they distinguish between main scenario quests, repeatable quests, and everything else, but I'd like to distinguish about six or seven categories:
- Main Scenario Quests
- Festival / Event quests
- Quests within a continuing Side Story
- Normal Side Quests
- Side Quests that unlock content or features
- New repeatable quests (that I haven't completed before)
- Repeatable quests (already completed one or more times)
(The distinction between those last two is probably the least important, which would bring it down to six if repeatable ones are left alone.) I'd especially like Festival quests and quests that unlock content/features to be more clearly identified.
